TOMATO, RICE AND ITALIAN SAUSAGE SOUP

I hope you enjoy this soup, which I've been making for what seems like forever!! 10/09 NOTE: This recipe is my original one, made when the kids were little and didn't like too much spice. Now I sometimes doctor it up adding garlic, red pepper flakes, or whatever. This soup is very forgiving, so do your own thing! I originally did not add the sugar quantity in the recipe, so have now corrected this.

Tomato, Rice and Italian Sausage Soup image

Steps:

  • Saute bacon and onion together until lightly browned. Drain off fat.
  • In soup pot, add peeled and diced fresh tomatoes or break up canned tomatoes. Add sugar, then bacon/onion mixture. Simmer for 10 minutes.
  • Meanwhile, in separate pan cook sausage covered in water for 15 minutes. Drain, then cut into slices.
  • Place sausage in soup pot with bacon/tomato mixture. Add beef stock or broth and oregano, then bring to a rolling boil.
  • Stir in rice. Cook over medium heat uncovered until approximately 10 minutes until rice is tender, adding additional broth if needed.
  • Remove from heat then stir in parmesan cheese and butter. Salt and pepper to taste.
  • Put in serving bowls and sprinkle on minced fresh parsley. Additional parmesan cheese may also be sprinkled on.

Italian Sausage and Tomato Soup image

Steps:

  • Heat olive oil in a large pot over medium heat; cook and stir turkey sausage is browned, about 5 minutes. Add onion and garlic, cooking and stirring until onion is tender, about 5 minutes more. Season with Italian seasoning, salt, and black pepper. Stir in carrots; cook and stir until carrots start to soften, 5 to 7 minutes.
  • Pour beans, diced tomatoes, beef broth, chicken broth, and tomato sauce into turkey mixture. Stir in bay leaves. Continue to simmer until carrots are tender, about 5 minutes. Add rigatoni pasta; cook and stir until pasta is cooked through but firm to the bite, about 13 minutes.

Steps:

  • Heat the oil in a large pot over medium-high heat. Add the garlic, sausages and onions and cook until lightly brown.
  • Add the crushed San Marzano tomatoes and 1/2 can water, bring to a simmer. Add the tomato puree, 1/2 can of water and simmer again. Repeat with the tomato sauce, again adding 1/2 can of water and bring the sauce to a simmer. Add the tomato paste and cook through.
  • Add the basil, parsley, marsala wine, pepper, salt and sugar into the pot and stir. Simmer for 2 to 3 hours, stirring frequently.

Steps:

  • Cut the tops off the tomatoes. Using your fingers or a melon baller, scoop out and discard the seed packets and then dig out the juicy meat of the tomatoes. Put the tomato flesh and any collected juices in a drink shaker or pitcher. Liquefy the flesh by breaking it up with a spoon. There should be a total of 1 1/2 cups of tomato juice.
  • Add the tequila, Grand Marnier, orange juice and salt. Shake or stir vigorously.
  • Spread the yogurt, black pepper and kosher salt on 3 separate plates. One by one, dip the rims of six wine glasses, goblets or martini glasses in the yogurt, the pepper and the salt. Divide the tomatorita mixture among the six glasses and serve immediately.

Mom's Zucchini, Tomato & Italian Sausage With Mozzarella image

Steps:

  • Spray 2 quart casserole with cooking spray.
  • Preheat oven to 350°F.
  • Place one layer of zucchini in bottom of dish, follow with a layer of tomato, a few rings of onion and some sausage.
  • Then cover with mozzarella.
  • Repeat the layers until you get to the top.
  • Bake approx 30 minutes until cheese is melted and a knife inserts easily into the center (to be sure zucchini is done).
  • Enjoy!
