- Cook tortellini according to package directions.
- Melt butter in skillet and cook garlic for 1 minute.
- Add Prosciutto and cook for 2 minutes.
- Add heavy cream and bring to a simmer.
- Add nutmeg and simmer until cream is thickened and reduced by half.
- Stir in 1/4 cup Parmesan and peas.
- Stir in reserved cooking liquid and tortellini and toss to coat.
- Season to taste with salt and freshly ground black pepper.

- Bring a large pot of salted water to a boil. Add the tortellini and cook as the label directs.
- Meanwhile, heat a large skillet over medium heat. Add the olive oil and prosciutto and cook until crisp, 3 to 4 minutes. Stir in the garlic and tomato paste and cook until fragrant, about 1 minute. Ladle in about 1 cup of the pasta cooking water and simmer until reduced by about half, 3 to 4 minutes. Add the cream and simmer until slightly thickened, 2 to 3 minutes.
- About 2 minutes before the tortellini are done, add the peas to the boiling water and cook until just tender. Drain the tortellini and peas and add to the skillet, tossing to coat with the sauce. Stir in the parsley. Sprinkle with the parmesan cheese.

- Cook the tortellini in boiling water according to package directions. Drain and set aside.
- Cook the frozen peas in a small amount of salted water until just tender. Drain and set aside.
- Cut the prosciutto into julienne strips about 2 inches long.
- Saute the prosciutto and mushrooms in a small amount of butter until just heated through. Set aside.
- Melt the butter in a medium saucepan, then add the flour.
- Cook over medium heat, stirring constantly, until the flour is a light golden color.
- Add the half-and-half and whisk until thoroughly blended.
- Continue to cook, stirring often, until the sauce thickens slightly.
- Place the egg yolk in a separate bowl and beat slightly. Mix about 1/2 cup of the hot half-and-half mixture into the egg yolk.
- Slowly whisk back into the hot mixture and cook over medium low heat for another few minutes, stirring constantly.
- Add the nutmeg and parmesan cheese and stir until the cheese is melted. Remove from heat.
- In a large serving bowl, combine the tortellini, peas, ham and mushrooms. Pour the sauce over and toss gently but thoroughly to coat.
- Sprinkle with grated parmesan cheese and serve immediately.

- Set a large pot of water with a pasta insert over high heat and bring to a boil. Place the pasta in the water and return to a boil, being sure to stir the pasta until the water boils again.
- While the pasta cooks, set a large 12-inch saute pan over medium high heat, and add the olive oil and the butter. Once the butter has melted, add the onions to the pan and saute until translucent, about 3 minutes. Add the garlic to the pan and saute for 30 seconds. Place the prosciutto in the pan and saute for 1 minute. Deglaze the pan with wine and cook until it is nearly evaporated, about 30 seconds. Add the cream, peas, salt and pepper to the pan and let the cream reduce by half, 4 to 5 minutes. If the pasta is not yet cooked, turn the fire off the sauce while the pasta continues to cook.
- Strain the pasta from the water once it is cooked, and place in a large heat resistant bowl. Pour the sauce over the pasta and sprinkle with the cheese and the parsley. Use tongs are two large forks to stir the sauce into the pasta and serve while hot.

- Lightly season pork with salt and black pepper. Arrange about 6 sage leaves over tenderloin. Wrap prosciutto around tenderloin and sage, overlapping prosciutto slightly; wrap in plastic wrap and refrigerate to allow prosciutto to set on pork tenderloin, 5 to 10 minutes. Remove plastic wrap.
- Heat olive oil in a skillet over medium heat. Fry wrapped tenderloin in the hot oil until prosciutto is crispy and lightly browned on all sides, 8 to 10 minutes. Transfer wrapped tenderloin to a baking dish, reserving oil in the skillet.

- Slice prosciutto into strips that are 1 inch long and 1/4 inch wide.
- Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until the tortellini float to the top and the filling is hot, about 3 minutes. Drain and cool under cold running water to stop the cooking process.
