Steps:
- In a large bowl, combine the flour, baking soda, and salt, and mix until fully incorporated.
- Slowly add the water until the mixture forms a dough.
- Divide the dough into roughly 12 loyas (balls), cover with a dish towel, and let rest for about 30 minutes.
- Sprinkle each ball with flour and flatten or roll out into a circle roughly 5 inches (12-cm) in diameter.
- Spread ghee on each round and make a cut from the center out to the edge, then roll to make a cone.
- Press the peak and flatten the center of the cone. Let rest for another 30 minutes.
- On a floured surface, roll each ball into a circle roughly 8 inches (20-cm) in diameter.
- Heat a tawah or flat frying pan over medium-high heat. Coat with oil and place a round of dough on the pan.
- Cook the dough until light brown, watching carefully, about 5 minutes. Then flip and cook on the other side, about 3-4 minutes more. Repeat with the remaining dough rounds.
- Break up the cooked roti with your hands or serve whole.
- Serve the fried roti with the fillings.
- Enjoy!

TRINIDAD PEPPER QUICHE
A Caribbean take on a classic. Super quick with less fat and calories than a traditional Quiche Lorraine. The flour mimics the 'body' of the traditional Quiche. The mild, flavourful, Trinidad Capsicum chinense peppers breathe new life into an old favourite. These peppers are a uniquely flavoured habenero with an almost undetectable heat. Locally they go by the name pimento or seasoning peppers. To Trinidadians they are as invaluable as salt. We put them in practically everything we cook. We use them to 'season' meats, and a host of other dishes. Serve with a salad and for those indulgent moments a glass of white wine for dinner, or have a slice for breakfast. I usually make two pies and freeze one for later on in the month. You can use any kind of mild pepper that appeals to your taste and is available to you locally for this recipe. I have also made this using red and green sweet peppers and it's just as delicious. Roasted red peppers would be great too.

Steps:
- Crumble 5 slices fried bacon in unbaked pie shell and cover with 1/2 cup cheese. The rest of the bacon and cheese goes into the other shell. I tend to use back bacon as there is less visible fat than the streaky kind.
- Combine flour, salt and crushed peppercorns, add evaporated milk and eggs. Really any kind of milk works well depends on how rich you want it. I use skimmed milk.
- Blend well and add chopped onion and chopped peppers . Pour into pie shells.
- Bake in a pre heated oven at 375 degrees F for 20 - 25 minutes or until inserted knife comes out clean.
- Slice and serve with a salad or use mini pastry shells for hors d'oeuvres.
TRINIDAD PELAU
Pelau is a stew from Trinidad made with either beef or chicken. The unique flavor comes from searing the meat in caramelized sugar then simmering with rice, coconut milk, and pigeon peas. Serve accompanied by slices of tomato, avocadoes, or cucumber.

TRINIDAD FOOD: 20 POPULAR DISHES IN TRINIDAD AND TOBAGO
From zenhealth.net
- Doubles. Doubles is the most popular street food in T&T; enjoyed throughout the day, but especially for breakfast. It averages about $1 USD. It contains two fried bara (hence the name doubles) made with flour, baking powder, yeast, and turmeric.
- Bake and shark. Another incredibly popular street food in T&T is fried bake and shark. It’s the best breakfast after an early morning beach run along the north coast.
- Sada roti. Here’s another classic Trinidad breakfast: sada roti. The roti is made with flour, baking powder and water and is rolled out into a flat, thin circle.
- Coconut bake. Coconut bake has a bread-like texture, unlike fried bake. Its ingredients include flour, baking powder, grated coconut meat, coconut milk, oil and yeast.
- Pelau. Pelau – pronounced pay-lah-ow – is an incredibly popular Trini lunch. It’s a one pot recipe made with pigeon peas, rice, veggies, coconut milk, browning, Caribbean seasonings and your choice of meat.
- Dhalpuri. Delicious dhalpuri is a type of roti that’s stuffed with seasoned and ground yellow split peas (dhal). It is cooked on a flat, cast iron griddle or tawa and brushed with oil or butter.
- Buss-up-shut. Paratha roti or buss-up-shut is another popular type of roti (and the third one mentioned in this list). It is made with flour, baking powder and water.
- Crab and dumpling. Curry crab and dumpling is the most popular dish in Tobago. The crab most often used is blue crab (Chesapeake blue crab). It is cleaned, seasoned, and cooked in curry powder, Caribbean green seasoning, garlic, and coconut milk.
- Callaloo. Curry crab is incredibly delicious; but I love crab and callaloo too! Callaloo, on its own, is a spinach side dish made with young taro (or dasheen) leaves, pumpkin, okra, coconut milk and all the seasonings you’ll expect in Trinidad food.
- Fried rice, macaroni pie and more. Callaloo goes really well with Trini-style fried rice, macaroni pie, plantains and so much more. Trini fried rice is made with rice, carrots, sweet peppers, and Caribbean green seasonings plus other veggies like ochro (okra), bodi (long beans) and cauliflower.

- Doubles. Doubles is undeniably the most popular street food on the island. It resembles a vegetarian sandwich. This food is made up of 2 baras (pieces of fried dough), filled with channa (chickpea), topped with various sauces such as pepper sauce, cilantro sauce, tamarind sauce, and coconut chutney, grated cucumber, or kuchela.
- Aloo Pie. Aloo pie is a long fried pocket filled with spiced mashed potato (aloo is the Hindi word for potato). The potato is cooked with chadon-beni and garlic.
- Saheena. Saheena is mouthwatering and, without doubt, one of the most loved street foods in the country. It is also a popular Divali (the Hindu festival of lights) dish.
- Pholourie. Another popular street food on the island is Pholourie. These fried blobs are made from a batter of chickpea flour seasoned with garlic, onion, tumeric, peppers, and then deep-fried.
- Chow. Fruits are abundant on the island of Trinidad – there is always a fruit in season. Nevertheless, as with all their food, Trinbagonians need it to be spicy.
- Bake and Shark. Bake and shark is two pieces of fried dough filled with a fried fillet of shark. However, it’s all about the toppings. The combinations are endless: mustard, ketchup, pepper sauce, sliced cucumber, sliced pineapple, tomatoes, lettuce, mayonnaise, or chadon-beni sauce can all be added.
- Gyro. Yes, you read that right, Trinidadian Gyro. There is a Syrian/Lebanese population in Trinidad, thus, it was only natural that their favorite meal made it to the food scene of Trinidad and Tobago.
- Souse. Souse is made from either chicken feet or pig’s trotters with cucumbers marinated in lime juice, onion, and peppers. At first, it does not have the most appealing look, especially when one sees bony feet sticking out of the pot.
- Barbecued Pigtail. People on this island don’t believe in wasting any sort of meat. Therefore, pigtail is part of its tradition and islanders can turn these cheap cuts into delicious meals.
- Black Pudding. To clarify, it is not a pudding in the least bit! It is a sausage made with pig’s blood, local herbs, and various spices. It is mostly eaten with the local bread, called hops, or by itself (on a sheet of wax paper) with pepper sauce, of course.
