Steps:
- Preheat the broiler to high.
- Butter the halved muffins, place them in a single layer on a baking sheet and broil until golden, about 2 minutes.
- Meanwhile, make the tuna salad: In a large bowl, mix together the tuna, artichoke hearts, mayonnaise, olives, mustard, dill, hot sauce, celery, scallions and lemon zest. Season with salt and pepper.
- Top each muffin half with a large scoop of tuna salad, arrange 2 slices of cheese on each and broil until the cheese is melted, about 2 minutes. Remove and top with tomato slices and chives to serve.
AHI TUNA MELT
Steps:
- In a bowl, stir together the thyme, garlic powder, 4 tablespoons of the cayenne, 3 tablespoons of the seafood seasoning and 2 tablespoons salt. Slice the tuna and coat on both sides with the spice mixture. Set aside to let the spices soak in.
- Place the egg whites in a blender and add the cream of tartar, vinegar, mustard, lemon juice, 3 tablespoons of the brown sugar and the remaining 2 tablespoons seafood seasoning. Blend at high speed while slowly pouring in the oil. Once thickened, add the pickles and the remaining 4 tablespoons cayenne and blend. Place in a bowl, cover and chill.
- Add the butter to a large skillet and melt over medium heat. Add the onions, Worcestershire and the remaining 2 tablespoons brown sugar and cook, stirring occasionally, until the onions are slightly wilted down.
- Prepare a grill or grill pan for cooking over medium-high heat and preheat the oven to 400 degrees F.
- Spread the Creole mayo remoulade on the bread slices.
- Lightly oil the grill grates. Grill the tuna for 1 minute per side, then remove to a baking sheet. Layer the Jack cheese and Swiss cheese on 4 of the bread slices, over the remoulade, and top with the cooked onions. Arrange the tuna on top of the onions, then close the bread to make sandwiches. Bake the sandwiches to melt the cheese, 8 minutes. Serve immediately.
MEDITERRANEAN TUNA MELTS

- Preheat the oven to 350 degrees F. Drain the tuna, reserving 2 tablespoons oil. Toss the tuna, reserved oil, 1/4 cup parsley, the olives, red onion, the juice of 1/2 lemon, the smoked paprika, a pinch of salt and a few grinds of pepper in a medium bowl. Spread the tuna salad on 4 of the pita halves; top with the cheese and the remaining pita halves.
- Heat 2 teaspoons olive oil in a large nonstick skillet over medium-high heat. One at a time, add the sandwiches and cook until lightly toasted, about 2 minutes per side. Transfer to a baking sheet and bake until warmed through, about 5 minutes.
- Meanwhile, toss the arugula, tomatoes, cucumbers, the remaining 1/4 cup parsley, 2 tablespoons plus 1 teaspoon olive oil and the juice of the remaining 1/2 lemon in a medium bowl; season with salt and pepper. Cut the tuna melts into wedges. Serve with the arugula salad.

ORIGINAL TUNA MELTS
Long before Tuna Melts, in their many variations, became standard on every menu, my mother discovered this 1950's recipe. We grew up having these kid-friendly rolls on Friday nights when, as Catholics, we were forbidden meat. Served in corn-on-the-cob dishes with a side of french fries and a salad, Mom was out of the kitchen in under 45 minutes and we kids were in hog heaven!

Steps:
- Drain and flake tuna in a medium bowl.
- Add pickles, onion and cheese and mix well.
- Add mayonnaise and mix well.
- Fill hot dog rolls and wrap each in tin foil, twisting both ends to close.
- Place on cookie sheet and bake at 350 degrees for 20-25 minutes.
- Serve in corn-on-the-cob dishes with french fries and a salad.
- These can also be cooked on a grill, making them suitable for camping.
TUNA MELT
Steps:
- Preheat the broiler and set the rack about 4 to 5 inches from the heat source.
- Spread the bread out on a baking sheet and toast. Spread the toasted muffins or bread with the mayonnaise, if using. Top with the Tuna Salad and then the shredded cheese. Place the baking sheet under the broiler and heat for 3 to 5 minutes, until the cheese has melted. Serve immediately.
- In a small mixing bowl break up the tuna with a fork. Toss with the celery, onion, and parsley. Add the mayonnaise, mustard, and season with pepper to taste. Stir to combine. Add lemon juice, if using.
MELT YOUR HEART TUNA MELT

- For the tuna: In a large bowl, break up the tuna with a fork and add the mayonnaise, lemon juice, red onions, green onions, basil, cilantro, parsley, mint and vinegar. Mix well to combine. Taste and season with salt, pepper and extra lemon juice and mayonnaise as desired.
- For the sandwich: Brush the softened butter on 1 side of each slice of bread, setting aside some butter for cooking the sandwiches. Place the bread buttered-side down on a baking sheet. Divide the tuna among 4 slices of bread and top each with 2 slices of cheese. Complete the sandwich with the remaining 4 slices of bread, buttered-side up.
- Heat a large nonstick skillet over medium-high heat and add half of the remaining butter. When the butter melts, place 2 sandwiches in the pan and cook until toasted and golden brown on each side. Repeat with the remaining sandwiches. (If your pan is large enough, you can cook all the sandwiches at the same time.) Serve warm, with pickles.
