SWEDISH MEATBALLS (SVENSKA KOTTBULLAR)

Our family's traditional Christmas recipe, frequently doubled and kept warm in a crock pot. Worth the effort, and the meatballs are even better the next day! Reserve brown gravy and add sour cream to it the day you serve the leftovers.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the bread crumbs into a small bowl, and mix in the cream. Allow to stand until crumbs absorb the cream, about 10 minutes. While the bread is soaking, melt 1 teaspoon of butter in a skillet over medium heat, and cook and stir the onion until it turns light brown, about 10 minutes. Place onion into a mixing bowl; mix with the ground beef, ground pork, egg, brown sugar, salt, black pepper, nutmeg, allspice, and ginger. Lightly mix in the bread crumbs and cream.
  • Melt 1 tablespoon of butter in a large skillet over medium heat. Pinch off about 1 1/2 tablespoon of the meat mixture per meatball, and form into balls. Place the meatballs into the skillet, and cook just until the outsides are brown, about 5 minutes, turning the meatballs often. Insides of the meatballs will still be pink. Place browned meatballs into a baking dish, pour in chicken broth, and cover with foil.
  • Bake in the preheated oven until the meatballs are tender, about 40 minutes. Remove meatballs to a serving dish.
  • To make brown gravy, pour pan drippings into a saucepan over medium heat. Whisk the flour into the pan drippings until smooth, and gradually whisk in enough beef broth to total about 2 1/2 cups of liquid. Bring the gravy to a simmer, whisking constantly until thick, about 5 minutes. Just before serving, whisk in the sour cream. Season to taste with salt and black pepper. Serve the gravy with the meatballs.

Steps:

  • 1. Combine the first six ingredients in a large bowl, then add the beef and mix together lightly.Shape the meat into 1 1/2 inch balls.
  • 2. Place a large skillet over medium heat. Once hot, put the meatballs in and brown on all sides (you may need to do this in batches, depending on the size of your skillet. Do not overcrowd or they will steam and not brown). As they brown, remove them to paper towels and drain; reserve the drippings in the pan.
  • 3. GRAVY: Stir the flour into the pan and mix with the liquid in there. Cook and stir over medium to med-high heat until it gets light brown in color. Add the milk while whisking (to prevent lumping of the gravy). Then stir in the consomme, Worcestershire sauce, salt and pepper, and bring to a boil. Cook and stir for about two minutes, until thickened.
  • 4. Reduce the heat to a medium-low and add the meatballs back into the pan with the gravy. Cook, uncovered, 15-20 minutes (or until the meatballs are completely cooked through), stirring occasionally.
  • 5. While the meatballs are cooking in the sauce, cook the noodles according to the package directions. Drain the noodles and then toss them with the butter.
  • 6. Serve the meatballs and gravy over the noodles and sprinkle with parsley. Enjoy!

CLASSIC SWEDISH MEATBALLS

I'm a "Svenska flicka" (Swedish girl) from northwest Iowa, where many Swedes settled at the turn of the century. This recipe was given to me by a Swedish friend. It's obviously a 20th century version of a 19th century favorite, since back then they didn't have bouillon cubes or evaporated milk! I think you'll agree that these modern-day "Kottbullar" are very tasty. -Emily Gould, Hawarden, Iowa

  • In a large mixing bowl, combine ground beef, ground pork, minced onion, breadcrumbs, seasonings, eggs, and heavy cream. Using your hands, combine ingredients completely until thoroughly mixed.
  • Roll mixture into 1-inch sized meatballs, packing tightly. Set aside until all the mixture is used. You should be able to make about 75 meatballs.
  • Heat a large cast iron skillet on medium high heat. Add meatballs in a single layer with a little bit of space between each one. Cook several minutes then rotate the meatballs to cook evenly on all sides. Once cooked, remove meatballs onto a serving plate, and add more (I had to do about 3 rounds).
  • Once all the meatballs are cooked, remove them all from the pan and add the butter for the sauce. Using a whisk, melt butter with the drippings in the pan. Sprinkle the flour over the melted butter and whisk over medium heat for about 1 minute. Add in the beef stock, salt, pepper, and allspice. Whisk until no lumps (except the possible meatball pieces from the pan). Turn heat down to low, add in the heavy cream, and simmer for another 15-20 minutes, stirring occasionally. Once the sauce is thickened, return the meatballs to the skillet and simmer until heated (only takes a couple minutes).
