TOSSA SHOYU OR TOSSA SOY SAUCE FOR SASHIMI AND SUSHI

This is sometimes served with sashimi pieces instead of soy sauce. Normally I use bonito flakes, but since it's hard for many people to find it locally I am subbing dashi powder aka bonito powder.

Tossa Shoyu or Tossa Soy Sauce for Sashimi and Sushi image

Steps:

  • Heat all ingredients in a saucepan until it comes to a boil. Turn down heat to simmer and cook additional 2 minutes.
  • Keep in refrigerator for sashimi and sushi.

1/3 teaspoon dashi powder
3 tablespoons water
3 tablespoons soy sauce
1 tablespoon sake
1/2-3/4 teaspoon mirin (some people like it sweeter)

TSUKURI JYOUYU - SOY SAUCE FOR SASHIMI

In Japan they serve sushi with Tsukuri Jyouyu which is a blend of soy and mirin. The mirin "adds a special aroma to the soy sauce, enhancing the taste of the plain fish". From "Sushi Whimps". This recipe seems easy to halve.

Steps:

  • Pour mirin into a saucepan and bring to a boil over high heat. Stir in the soy sauce and cool to room temperature.
  • Pour into a bottle, add kombu, and close tightly. Store in a cool dark place for up to one year.

Steps:

  • Combine the dashi, soy sauce, and mirin in an airtight container, shake to combine and refrigerate until cold, approximately 1 hour. Serve with soba noodles.

Sashimi Salad with Soy and Orange image

Steps:

  • Grate the zest of 1 orange and the lime into a large bowl. Squeeze 1 tablespoon of juice from the grated orange and 2 tablespoons of juice from the grated lime into the bowl (you may need a second lime to get the 2 tablespoons of juice). Whisk in the soy sauce and the oil. Set the dressing aside.
  • Use a sharp knife to slice the rind and pith from the remaining oranges. Working over a mixing bowl, cut between the membranes to free the orange segments, letting them drop into the bowl. Pour any juice into a cup and reserve it for another use. Add the mâche, frisée, and cucumbers, if using, to the orange segments. Using a large sharp knife, cut the salmon into 1/3-inch-thick slices. Add the salmon to the bowl. Drizzle with the dressing, and toss gently to coat. Allow the flavors to meld for at least 2 minutes.
  • Divide the salad among 4 serving plates. Sprinkle with the toasted sesame seeds, and serve.

3 tablespoons grapeseed oil
6 cups mâche (lamb's lettuce) leaves
2 cups frisée lettuce, torn into bite-size pieces
1/2 cucumber, peeled, seeded, and thinly sliced (optional)

1 teaspoon sesame seeds, toasted
