TUNA CHEESE SANDWICHES
"This is my husband Kent's very favorite sandwich," says Barbara Billeter from Clovis, California, "and I often make a double batch when lots of family or friends are over." TIP: "I prepare the tuna mixture in advance and add the lettuce just before assembling the sandwiches. This gives me more time to visit with my company," suggests Barbara.

TUNA PIE
This is a change from the traditional tuna casserole. The cheese-flavored crust is similar in texture to a graham cracker crust, perhaps a bit firmer, with a slightly crunchy crumb topping, and the tuna filling is somewhat like a quiche flavored with sour cream and dill. I got the recipe from an old Penzey's catalogue. See the bottom of the recipe for a suggestion on making a smaller pie for less servings.

Steps:
- Preheat oven to 400.
- Butter a 10" deep dish pie pan (or spray well with non-stick spray).
- In a medium bowl, combine flour, 1 cup cheese, salt and paprika.
- Cut the butter into chunks and mix or rub with your fingers into the flour mixture until coarse crumbs are formed.
- Reserve 1 cup of the mixture and press the rest into the bottom and up the sides of the prepared pie pan.
- Arrange the drained tuna on the crust.
- Beat the eggs with a mixture until light and fluffy.
- Stir in the sour cream, the remaining 1/2 cup cheese, the mayonnaise, bell pepper, onion, and dill weed.
- Pour the mixture over the tuna and sprinkle with the reserved crumb mixture.
- Bake for 35 to 40 minutes.
- Let stand 15 minutes before cutting and serving.
- Note: I have made this recipe in a 8" pie pan using 2/3 of the recipe ingredients for fewer servings, with excellent results.

- Place the cauliflower on an oven tray and drizzle with little olive oil. Roast for about 10 minutes until still firm but just starting to brown, then remove from the oven.
- In a large sauté pan or deep frying pan on a low heat, melt the butter, adding three quarters of the sliced spring onion and cook gently for 1-2 minutes. Sprinkle flour over the butter and spring onions and stir quickly. Slowly pour in the milk and stock stirring continuously, now turn the heat up to medium low and keep stirring until the sauce thickens and starts to bubble. The sauce needs to be quite thick and smooth. Remove from the heat, add 1½ cups of grated cheese and the mustard. Season to taste with salt and pepper and a small dash of Tabasco. Spread the tuna evenly over the base of the quiche dish, then pile the cauliflower florets over the tuna. Top with the sauce and sprinkle the rest of the Cheddar cheese. Then bake for 15-20 minutes until the top turns golden brown. Scatter with the remaining spring onions and serve piping hot, with crusty bread and a green salad.
