- In a large nonstick skillet, cook the turkey, onion and garlic over medium heat until meat is no longer pink; drain. Add zucchini, salsa, corn, red pepper and chilies. Reduce heat; cover and simmer until vegetables are tender. Stir in seasonings., For each quesadilla, place one tortilla in an ungreased nonstick skillet. Sprinkle with 1/4 cup cheese. Top with 1/2 cup filling, then sprinkle with another 1/4 cup cheese. Cover with another tortilla. Cook over medium heat, carefully turning once, until lightly browned on both sides and cheese begins to melt. Cut into eight wedges.

TURKEY QUESADILLAS

Steps:
- In a large non stick skillet, heat oil over medium high heat and add turkey and cook, stirring until no longer pink.
- Stir in green pepper, onion and chili powder.
- Cook until onion begins to soften. Season with hot pepper sauce to taste, salt and pepper.
- Remove turkey mixture to a bowl.
- Wipe out skillet with paper towel.
- Brush one side of each tortilla with oil and place oiled side down in skillet.
- Spoon 1/4 of turkey mixture over tortilla and sprinkle with 3/4 cup of cheese.
- Place another tortilla over top, oiled side up.
- Cook both sides until lightly browned and cheese is melted.
- Repeat with remaining tortillas.
- Cut each into six wedges.
- Serve with salsa and sour cream.
- NOTE: I often use left over turkey or chicken. I also just spritz the tortilla with oil.
SMOKED TURKEY, BRIE, AND APRICOT QUESADILLA
Steps:
- Set up grill for direct cooking over medium heat and oil grate when ready to cook.
- For Quesadilla:
- Lay out 4 tortillas; top each tortilla with brie, smoked turkey, apricot preserves, and Jack cheese. Top with remaining tortillas.
- For Salad:
- In a bowl, toss to combine herbs and lemon juice. Season with salt and pepper; set aside.
- Place quesadillas on hot oiled grill for 3 to 4 minutes per side or until cheese has melted flipping with a spatula. Serve hot topped with mixed herb salad.
- Indoor:
- Prepare quesadillas as directed. In a skillet large enough to fit tortillas, heat 1 to 2 tablespoons of vegetable oil over medium heat. When oil is hot, carefully fry both sides of quesadillas for 2 to 3 minutes or until golden brown; turning with a large spatula. Garnish, as directed.
TURKEY AND SWEET POTATO QUESADILLAS WITH CHIPOTLE MAYO
Steps:
- In a large bowl combine leftover turkey and salsa. To construct quesadilla, place one tortilla on work surface and spread with half the mashed sweet potato. Then add half the turkey mixture and half the cheese. Top with tortilla and brush with a bit of canola oil.
- In a large skillet over medium high heat add quesadilla oil side down then brush the top with oil. Cook for about 3 minutes until bottom begins to brown and cheese starts to melt. Flip and repeat.
- In a small bowl combine mayonnaise, sour cream, lime juice, chipotle, cumin, and cilantro, and season with salt and pepper.
- Remove quesadilla from pan, cut into wedges and serve with chipotle dipping sauce. Garnish with green onions.
QUESADILLAS WITH SAUSAGE AND PEPPERS

- Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon and stirring occasionally, until browned and mostly cooked through, about 5 minutes.
- Add the bell peppers, onion, garlic, oregano, 1/2 teaspoon salt and a few grinds of pepper to the skillet. Cook, stirring occasionally, until the vegetables are tender, about 15 minutes. Add 1/3 cup each marinara sauce and water and cook, stirring, until the vegetables are lightly coated and the skillet is mostly dry, 3 to 5 minutes. Transfer to a medium bowl and carefully wipe out the skillet.
- Lay the tortillas on a work surface. Top one side of each tortilla with 1/4 cup mozzarella, 1/2 tablespoon Parmesan, one-quarter of the sausage-and-peppers mixture and another 1/4 cup mozzarella and 1/2 tablespoon Parmesan. Fold the tortillas over the filling and gently press.
- Brush the tortillas with the remaining 1 tablespoon olive oil. Working in two batches, cook the quesadillas in the reserved skillet over medium heat until browned, about 2 minutes per side.
- Warm the remaining 1 cup marinara sauce in a small saucepan or the microwave. Cut the quesadillas into wedges. Serve with the sauce for dipping.
TURKEY QUESADILLA
Steps:
- Place 2 tortillas on your board. Spread 1 with cranberry sauce and set aside. Sprinkle the cheese over the other one and crumble the stuffing on top. Add the green beans, turkey, and jalapeno peppers. Pick up the first tortilla and place it cranberry side down onto the filled one. Press gently but firmly to keep the quesadilla together.
- Spray a nonstick skillet with cooking spray and put it over medium heat. Place the quesadilla in the skillet and cook until the bottom is lightly browned and the cheese is melted, about 2 minutes. Flip the quesadilla and cook it on the other side for another 2 minutes. Slide it onto a cutting board, cut it into wedges, and serve.

- Set oven to 375 degrees.
- In a bowl stir together the beans with cheese, turkey and salsa; season with salt and pepper to taste if desired.

- Mash avocado in medium bowl. Add cream cheese, cumin, garlic powder, salt and pepper; blend well. Stir in tomatoes and chiles.
- Sprinkle 3/4 cup of the Monterey Jack cheese on 4 of the tortillas. Top each with a turkey slice. Spread avocado mixture over turkey. Top with remaining turkey slices. Sprinkle with 3/4 cup of the Cheddar cheese. Top with remaining tortillas.

This is just a little concoction that I made yesterday that was delicious. I didn't want to forget it, so I'm posting it here. It makes a quick, easy, and (mostly) healthy snack, lunch, or light dinner.

- Place tortilla in a warm skillet. Add cheeses to whole tortilla, within 1/2" of edge. Melt cheese over medium heat.
- Add slices of turkey to the center of the tortilla, staggering on top of one another.
- Cook another couple of minutes until turkey is warm. (Careful not to burn the bottom of the tortilla). Tortilla should be pretty stiff and crispy. Turn off heat.
- Carefully spread miracle whip onto one side of the tortilla. Add lettuce and tomato slices on top of miracle whip.
- Fold tortilla in half and press lightly with a spatula. Remove from skillet onto a plate and enjoy hot with soup or chips.
