Steps:

  • In a large non stick skillet, heat oil over medium high heat and add turkey and cook, stirring until no longer pink.
  • Stir in green pepper, onion and chili powder.
  • Cook until onion begins to soften. Season with hot pepper sauce to taste, salt and pepper.
  • Remove turkey mixture to a bowl.
  • Wipe out skillet with paper towel.
  • Brush one side of each tortilla with oil and place oiled side down in skillet.
  • Spoon 1/4 of turkey mixture over tortilla and sprinkle with 3/4 cup of cheese.
  • Place another tortilla over top, oiled side up.
  • Cook both sides until lightly browned and cheese is melted.
  • Repeat with remaining tortillas.
  • Cut each into six wedges.
  • Serve with salsa and sour cream.
  • NOTE: I often use left over turkey or chicken. I also just spritz the tortilla with oil.

  • Set up grill for direct cooking over medium heat and oil grate when ready to cook.
  • For Quesadilla:
  • Lay out 4 tortillas; top each tortilla with brie, smoked turkey, apricot preserves, and Jack cheese. Top with remaining tortillas.
  • For Salad:
  • In a bowl, toss to combine herbs and lemon juice. Season with salt and pepper; set aside.
  • Place quesadillas on hot oiled grill for 3 to 4 minutes per side or until cheese has melted flipping with a spatula. Serve hot topped with mixed herb salad.
  • Indoor:

Steps:

  • In a large bowl combine leftover turkey and salsa. To construct quesadilla, place one tortilla on work surface and spread with half the mashed sweet potato. Then add half the turkey mixture and half the cheese. Top with tortilla and brush with a bit of canola oil.
  • In a large skillet over medium high heat add quesadilla oil side down then brush the top with oil. Cook for about 3 minutes until bottom begins to brown and cheese starts to melt. Flip and repeat.
  • In a small bowl combine mayonnaise, sour cream, lime juice, chipotle, cumin, and cilantro, and season with salt and pepper.
  • Remove quesadilla from pan, cut into wedges and serve with chipotle dipping sauce. Garnish with green onions.

  • Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon and stirring occasionally, until browned and mostly cooked through, about 5 minutes.
  • Add the bell peppers, onion, garlic, oregano, 1/2 teaspoon salt and a few grinds of pepper to the skillet. Cook, stirring occasionally, until the vegetables are tender, about 15 minutes. Add 1/3 cup each marinara sauce and water and cook, stirring, until the vegetables are lightly coated and the skillet is mostly dry, 3 to 5 minutes. Transfer to a medium bowl and carefully wipe out the skillet.
  • Lay the tortillas on a work surface. Top one side of each tortilla with 1/4 cup mozzarella, 1/2 tablespoon Parmesan, one-quarter of the sausage-and-peppers mixture and another 1/4 cup mozzarella and 1/2 tablespoon Parmesan. Fold the tortillas over the filling and gently press.
  • Brush the tortillas with the remaining 1 tablespoon olive oil. Working in two batches, cook the quesadillas in the reserved skillet over medium heat until browned, about 2 minutes per side.
  • Warm the remaining 1 cup marinara sauce in a small saucepan or the microwave. Cut the quesadillas into wedges. Serve with the sauce for dipping.

  • Place 2 tortillas on your board. Spread 1 with cranberry sauce and set aside. Sprinkle the cheese over the other one and crumble the stuffing on top. Add the green beans, turkey, and jalapeno peppers. Pick up the first tortilla and place it cranberry side down onto the filled one. Press gently but firmly to keep the quesadilla together.
  • Spray a nonstick skillet with cooking spray and put it over medium heat. Steps:

  • Place tortilla in a warm skillet. Add cheeses to whole tortilla, within 1/2" of edge. Melt cheese over medium heat.
  • Add slices of turkey to the center of the tortilla, staggering on top of one another.
  • Cook another couple of minutes until turkey is warm. (Careful not to burn the bottom of the tortilla). Tortilla should be pretty stiff and crispy. Turn off heat.
