TURKEY MONTE CRISTO
If you like French toast and grilled cheese, you'll love a Monte Cristo. This sandwich is usually pan-fried, but baking it instead means you can use less butter and make several at the same time.

- Preheat oven to 400 degrees. Line a baking sheet with a nonstick baking mat; brush with butter. In a 9-by-13-inch baking dish, whisk together eggs and milk. Season with salt and pepper.
- Spread cranberry sauce on 4 slices of bread. Top with turkey; season with salt and pepper. Sprinkle cheese evenly over turkey. Top with remaining bread slices. Carefully transfer sandwiches to egg mixture and soak, pressing lightly with a spatula, 1 minute a side.
- Transfer to baking sheet; bake 15 minutes. Flip and bake 7 minutes more. Let rest 5 minutes before serving.
POST-THANKSGIVING MONTE CRISTO
An overstuffed turkey sandwich is as much a part of the post-Thanksgiving game plan as watching football on TV, but this one is so luscious you'll want to make it year-round. Cranberry sauce, mustard, and cheese keep the sliced breast moist, and a golden-brown egg batter elevates that old chestnut to showstopper status.

- In a small bowl, mix together the cranberry sauce, mustard, and rosemary. Lay out the slices of bread. Divide the mustard mixture evenly over the 8 slices of bread and spread almost to the edges. Divide the cheese slices among the bread. Divide the turkey over every other slice of bread. Sandwich the turkey and cheese slices together.
- In a medium bowl, whisk together the eggs, heavy cream, and salt.
- Heat a large skillet over medium heat. Add the oil to the pan and heat for 1 minute. Working with one sandwich at a time, dip both sides of the sandwich in the batter and place directly into the hot pan. Repeat with the remaining sandwiches. Cover with a lid and allow to cook for 3 to 4 minutes or until the first side is golden brown.
- Remove the lid, flip each sandwich and continue to cook on the remaining side until golden brown and the cheese is melted, approximately another 4 minutes. Cook in batches if needed. Sprinkle one side of each sandwich with powdered sugar and serve warm.
TURKEY MONTE CRISTO SANDWICH

- Preheat the oven to 400 degrees. Heat a large cast-iron griddle or skillet over medium heat.
- Whisk together the baking mix, evaporated milk, heavy cream and eggs in a large bowl.
- Add the butter and oil to the griddle so the entire surface is covered. Dip each English muffin half into the batter to completely coat, then transfer to the hot griddle. Cook until each side is brown, crisp and cooked through, 2 to 3 minutes per side. Remove half of the muffins to a wire cooling rack and put the other half on a baking sheet.
- Toss the turkey, pickled jalapenos and pickle juice in a medium bowl. Divide the turkey among the muffins on the baking sheet. Top the turkey with a few slices of apple and a slice of cheese. Bake the sandwiches until brown and bubbly, 4 to 5 minutes.
- Meanwhile, stir together the maple syrup, cranberry sauce and bourbon in a small saucepan over medium heat until melted.
- Remove the sandwiches from the oven and top with their other muffin halves. Transfer to a serving platter or plates, dust with confectioners' sugar and serve with the sauce.

- To make the sandwiches: Lay the bread out on the work surface. Spread one side of each slice with the mustard. Spread half of the cheese on 4 slices of the bread. Cover with half of the turkey and season with salt and pepper to taste. Evenly spread the cranberry on the turkey on the sandwich. Top with the remaining turkey; season with salt and pepper to taste, and cover with the remaining cheese and bread. Press down slightly on each sandwich. In a lipped plate or dish, whisk together the eggs and milk, and season with salt and pepper to taste. Preheat the oven to 350 degrees F. Heat 2 large skillets over medium-low heat, add a tablespoon of both butter and oil to each pan. Dip and coat each of the sandwiches in the egg mixture and lay in the pans. Cook until golden brown, about 4 minutes per side. Transfer the sandwiches to a baking sheet and bake until the cheese is melted, about 6 to 8 minutes.
TURKEY-BACON MONTE CRISTO SANDWICHES
Use up leftover turkey and cranberry sauce with these battered, griddled and baked sandwiches.

- Preheat the oven to 350 degrees F.
- Lay the bacon in a large nonstick skillet and cook over medium heat until golden and crispy, about 5 minutes per side. Transfer to a paper-towel-lined plate to drain.
- Lay 4 slices of the bread on a work surface. Spread one side of each slice with some mustard and top each with 2 slices of bacon. Evenly divide half of the Gouda and then half of the turkey among the sandwiches and season lightly with salt and pepper. Evenly spread the cranberry sauce over the top of each and top with the remaining turkey. Season lightly with salt and pepper. Top with the remaining Gouda and remaining 4 slices of bread to make 4 sandwiches total. Press down slightly on each sandwich.
- Whisk together the milk, nutmeg and eggs in a medium bowl; season with salt and pepper.
- Heat 2 large skillets over medium-low heat and add 1 tablespoon each of the butter and oil to each skillet. Dip each sandwich in the egg mixture to coat all over and lay them in the skillets. Cook, turning once, until golden brown, about 4 minutes per side. Transfer the sandwiches to a baking sheet and bake until the cheese is melted, about 6 to 8 minutes.
