Steps:

  • In a large resealable plastic bag, combine the flour, salt if desired and pepper. Add the cutlets, two at a time and shake to coat. In a skillet, cook cutlets in butter for 2-3 minutes on each side or until lightly browned. , Meanwhile, in a skillet, saute mushrooms in oil until tender. Add garlic and rosemary; cook and stir for 1 minute. Add the tomatoes, wine or broth, brown sugar, salt if desired and pepper; cook and stir for 5 minutes. Stir in butter and basil. Serve cutlets with sauce. Sprinkle with lemon juice and parsley.

Steps:

  • Place turkey cutlets between two pieces of plastic wrap and pound with a meat mallot or rolling pin until 1/4" thick.
  • Sprinkle cutlets with salt and pepper.
  • Grate peel of one lemon to make 1/2 tsp zest; cut lemon and squeeze to make 2 tbsp juice.
  • Cut second lemon into thin slices and set aside.
  • Combine chicken broth and cornstarch in small bowl and set aside.
  • Heat oil in a 12" skillet over med high heat.
  • Saute cutlets 3 minutes per side.
  • Remove to a platter and keep warm.
  • Add lemon juice, lemon zest and lemon slices to skillet.

Having tried lots of different recipes through adventure, events and tag games, I now find myself with a pantry full of condiments and spices that I like but don't use very often. That has recently lead me to find new dishes which are simple, healthy and take advantage of these ingredients. This originated from a turkey recipe website and includes my modifications. Though I prefer it with turkey, it works well with chicken cutlets. Preparation includes 30 minutes to chill the poultry. This recipe is 4 pts per serving.

Pepper Crusted Turkey (Or Chicken) Cutlets With Chutney Sauce image

Steps:

  • Crush peppercorns with a mortar with pestle or in a spice grinder until coarse. (If you have neither, place the peppercorns in a plastic ball and gently crush them with a rolling pin.) Pat peppercorns on both sides of turkey cutlets. Wrap cutlets flat in plastic wrap and chill for 30 minutes.
  • (Note: If you are using chicken, pound to even thinness prior to crusting them with pepper. ).
  • In large non-stick skillet, over medium heat, saute poultry in olive oil 4 to 5 minutes per side or until no longer pink in center. Remove cutlets from pan and keep warm.
  • Combine the broth, ginger and 3 tablespoons of finely minced scallion bottoms (white and light green part) together and put into the skillet. Stir scraping the bits from the pan. Cook for just a minute.
  • Add the chutney and brandy and cook until warmed. If you like, you can chop the mango chunks in the chutney in advance.
  • Plate each cutlet and place one quarter of sauce on top. Garnish with a small sprinkle of chopped scallion greens (tops).

  • Heat 2 quart saucepan of salted water to boiling over high heat. Add orzo and cook as labe directs. Drain.
  • Red Pepper Sauce:
  • Place 3/4 c red peppers in blender. Add 1/4 cup water, 1/4 c basil leaves, 1/4 tsp salt and 1/4 tsp black pepper.
  • Blend until puteed but not completely smooth. Set aside (makes about 3/4 cup).
  • Cut remaining red peppers into 1/2 inch wide strips. Place turkey scaloppines on a sheet of waxed paper. Evenly divide red pepper strips and remaining basil leaves among turkey. Spoon 1 level tabelspoon of cream cheese on 1 end of each scaloppine. Loosely roll each scaloppine jelly-roll fashon to enclose filling; secure with a toothpick.
  • Heat nonstick 10" skillet over medium high heat until hot. Add rolls to skillet; sprinkle with 1/4 tsp salt and 1/4 tsp black pepper. COver skillet and cook 5-6 minutes or until rollsa re browned on all sides and turkey is no longer pink, turning once.
  • Remove toothpicks from rolls. Divide orzo among 4 dinner plates and arange turkey rolls on plates with orzo; serve with pepper sauce.

Steps:

  • Cut turkey into 4 pieces. Place 1 piece, cut side up, between pieces of plastic wrap or waxed paper. Use flat side of meat mallet, pounder or rolling pin to gently pound each turkey piece to 1/4-inch thickness. Repeat with remaining turkey pieces.
  • Sprinkle turkey with salt and pepper. Place flour in shallow bowl. Coat turkey lightly with flour, dusting off excess.
  • In 10-inch skillet, heat 2 tablespoons of the oil over medium-high until shimmering and hot. Add turkey and cook about 3 minutes or until lightly browned. Flip and cook 1 minute longer. Remove turkey from skillet and place on plate. Cover tightly with foil.
  • Add remaining 1 tablespoon oil to skillet and stir in asparagus and bell pepper. Sauté 1 minute. Add broth and heat to boiling. Boil uncovered 2 minutes. Stir in lemon peel and lemon juice. When liquid returns to boiling, remove from heat. Beat in butter, 1 piece at a time, with wire whisk, adding the next piece only after the first has been completely beaten in and melted. When all of the butter has been beaten in, stir in parsley.
  • Place 1 turkey piece on each serving plate. Use kitchen tongs to remove asparagus and pepper strips from sauce and place next to cutlet. Spoon sauce over turkey and vegetables.
