- 1. FOR THE MEATLOAF: Adjust oven rack to upper-middle position and heat oven to 350 degrees. Line wire rack with aluminum foil and set in rimmed baking sheet. Melt butter in 10-inch skillet over low heat. Stir baking soda into melted butter. Add onion and 1/4 teaspoon salt, increase heat to medium, and cook, stirring frequently, until onion is softened and beginning to brown, 3 to 4 minutes. Add garlic and thyme and cook until fragrant, about 1 minute. Stir in Worcestershire and continue to cook until slightly reduced, about 1 minute longer. Transfer onion mixture to large bowl and set aside. Combine oats, cornstarch, 3/4 teaspoon salt, and 1/2 teaspoon pepper in second bowl.
- 2. FOR THE GLAZE: Whisk all ingredients in saucepan until sugar dissolves. Bring mixture to simmer over medium heat and cook until slightly thickened, about 5 minutes; set aside.
- 3. Stir egg yolks and mustard into cooled onion mixture until well combined. Add turkey, Parmesan, parsley, and oat mixture; using your hands, mix until well combined. Transfer turkey mixture to center of prepared rack. Using your wet hands, shape into 9 by 5-inch loaf. Using pastry brush, spread half of glaze evenly over top and sides of meatloaf. Bake meatloaf for 40 minutes.
- 4. Brush remaining glaze onto top and sides of meatloaf and continue to bake until meatloaf registers 160 degrees, 35 to 40 minutes longer. Let meatloaf cool for 20 minutes before slicing and serving.

The original recipe for this came from Joan Lunden's Healthy Cooking. I've changed a couple things to our tastes. This is a very moist,delicious meat loaf. Its my favorite. I leave the topping off as my family doesn't care for it.

- Preheat oven to 350 degrees.
- Place oatmeal, milk and turkey in a large bowl. Mix well.
- Add egg white, onion, garlic, bell pepper ( I use both kinds), ketchup, oregano, cumin and salt and pepper.
- Mix well.
- Place mixture in a 9 x 5 loaf pan. Press into pan and smooth the top.
- Bake in the preheated oven for 40 minutes.
- While it is baking, mix topping.
- In a small bowl, stir together the brown sugar, ketchup and dry mustard.
- Remove the meatloaf from the oven after 40 minutes.
- Drain off some of the liquid that has accumulated. You can save it to use as a gravy if you wish.
- Spread topping over the meatloaf. Bake for an additional 20 minutes or until done.
- Let stand 5 minutes before slicing.

- Preheat the oven to 350 degrees F.
- In a small skillet over medium-low heat, add 2 teaspoons of the oil and heat until shimmering, about 2 minutes. Add the onion and cook until softened and brown, about 10 minutes. Add the parsley and cook another 1 to 2 minutes. Remove the mixture and set aside to cool. Add the remaining teaspoon of oil to the same skillet. Add the carrots and cook until softened, about 5 minutes.
- Place the ground turkey, breadcrumbs, ketchup, egg, the onion mixture, 1 teaspoon salt and some pepper in a food processor and pulse until fully combined. Transfer to a large bowl and add the carrots. Mix until combined. Form into a loaf and transfer to a casserole dish or baking sheet. Using a pastry brush, spread the BBQ Glaze over the top. Drape the bacon over the loaf in a crisscross pattern, tucking the ends underneath. Brush more glaze over the bacon layer. Bake until firm and cooked through, 55 to 60 minutes. Let rest for 5 minutes before serving.
- Stir together the ketchup, chili sauce, brown sugar, dry mustard and 1/3 cup water in a large saucepan. Bring to a boil, stirring to dissolve the sugar. Remove from the heat and set aside.

- Position an oven rack in the center of the oven and preheat to 375 degrees F. Line a rimmed baking sheet with parchment.
- Put the cranberries, ketchup, honey, sriracha, 1/2 cup water and 1/2 teaspoon of the mustard in a small saucepan and stir to combine. Heat over medium-high heat until the mixture starts to bubble, then reduce to a simmer and cook, stirring occasionally, until the mixture thickens and the cranberries soften, about 10 minutes. Use a potato masher to crush the cranberries until mostly smooth. Add the rosemary and 1/4 teaspoon salt and set aside to cool slightly.
- Grate the carrot and onion on the small shredding side of a box grater into a large bowl. (This will save any onion liquid, which will help keep the meatloaf moist.) Add the beef, turkey, egg, barley, Worcestershire, remaining 2 teaspoons of the mustard, 1 teaspoon salt and several grinds of pepper. Use your hands to mix everything together until well combined.
- Transfer the mixture to the prepared baking sheet and shape into a 9-by-4-inch loaf using your hands. Brush the meatloaf on all sides with half of the cranberry glaze. Bake until the glaze starts to adhere and dry slightly, about 15 minutes. - In a small bowl, stir together the oats and milk. Thinly slice 1/4 of the onion and set aside. Finely chop the remaining onion. In a large bowl, combine the turkey, oat mixture, chopped onion, bell pepper, eggs, Worcestershire sauce, ketchup, salt and a few grinds of pepper. Mix just until well combined.

BEST TURKEY MEATLOAF
After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

Chop some leftover rustic bread into cubes (I used roasted garlic bread) making sure to slice the bottom of the loaf off first (it's too hard for breadcrumbs). Once the bread is in cubes, place into a food processor, and pulse until you have fine bread crumbs. Heat the olive oil in a skillet over medium heat. Add the onion; cover and cook, stirring occasionally, until the onion has softened; about 5-7 minutes. Add the minced garlic and cook, stirring constantly, for 1 minute. Remove from the heat and set aside to cool. Whisk together the milk, egg, thyme, mustard, Worcestershire sauce, hot sauce, sea salt, and freshly cracked pepper, to taste in a small bowl. In another large bowl, mix the turkey, bread crumbs, parsley, cooked onion mixture, and egg mixture together with your hands until uniformly combined. For a while now a long while I have wanted meatloaf--ketchup glazed meatloaf, but not a dried dense overcooked one. These days we eat less red meat, but once in a while you need to feed your soul. This uses low sodium saltine crackers soaked with the milk so it is a moist light loaf, with the egg whites lightly beaten. Also cooked on broiler pan from toaster oven that died--kept the pan so fat drained away.

- Add ground turkey, breadcrumbs, minced onion, garlic, carrots, spinach, Mozzarella cheese, ketchup, parsley, eggs, Worcestershire sauce, salt, and pepper into a large bowl.
- Mix until everything is fully incorporated. (Sometimes clean hands work best for this step.)
- Place in a loaf pan that has been sprayed with nonstick cooking spray, or line a sheet pan with parchment paper or aluminum foil and pour meat on the prepared pan then use your hands to form into a loaf shape, trying to keep it level so it cooks evenly.
- Bake for 30 minutes.
- While baking, mix glaze ingredients together. Remove meatloaf from oven and brush glaze over top.

- Remove and let cool for 10 minutes before serving. Sprinkle with chopped parsley to garnish if desired.

- Glaze: Mix all ingredients and set aside.
- Meat loaf:.
- Heat oven to 350°F.
- Heat oil in medium skillet and sauté onion and garlic about 5 minutes. Set aside to cool.
- Mix eggs with thyme, salt, pepper, mustard, Worcestershire sauce, pepper sauce and milk.
- Add egg mixture to meat in large bowl, along with crackers, parsley and cooked onion and garlic.
- Mix until mixture does not stick to the bowl, if mixture sticks to bowl add milk by tablespoons until it does not stick.
- Shape into loaf.
- Place on foil lined pan, for easy clean-up.
- Brush with half the glaze.
- Arrange bacon slices crosswise over the top of loaf overlapping, tucking in bacon ends under loaf.
- Bake until bacon is crisp and internal temperature registers 160°F, about 1 hour.
- Cool at least 20 minutes.
- Simmer remaining glaze over medium heat until slightly thickened.
- Slice meatloaf and serve with extra glaze.
