AMAZING GROUND TURKEY TOMATO SAUCE

This is my tried and true best pasta sauce that is both fresh and healthy!

Amazing Ground Turkey Tomato Sauce image

Steps:

  • Heat olive oil in a large pot over medium-high heat. Saute onion, tomato, basil, and garlic in hot oil until the onion begins to soften, about 5 minutes.
  • Break ground turkey into small pieces and add to pot; season with Italian seasoning and oregano. Cook and stir mixture until turkey is completely browned, 7 to 10 minutes.
  • Stir tomato sauce into the turkey mixture; bring to a boil, reduce heat to low, and simmer until the sauce has thickened slightly, 20 to 25 minutes.
  • Stir tomato paste into the turkey mixture until evenly colored; season with salt and pepper. Cook until the liquid is reheated, 1 to 2 minutes more.

I season turkey with a blend of rosemary, garlic and paprika. Because I rub half of the mixture directly on the meat under the skin, I can remove the skin before serving and not lose any of the flavor. Steps:

  • In a food processor, combine the oil, garlic, rosemary, salt, paprika and pepper; cover and process until garlic is coarsely chopped., With your fingers, carefully loosen the skin from both sides of turkey breast. Spread half the garlic mixture over the meat under the skin. Smooth skin over meat and secure to underside of breast with toothpicks. Spread remaining garlic mixture over turkey skin., Place turkey breast on a rack in a shallow roasting pan. Bake, uncovered, at 325° until a thermometer reads 165°, 1-1/2 to 2 hours. (Cover loosely with foil if turkey browns too quickly.) Let stand for 15 minutes before slicing. Discard toothpicks.

Add turkey and tomato paste and cook until meat is browned, stirring once, about 5 minutes. Add wine and cook until almost all of the liquid is evaporated, about 2 minutes. Add tomatoes, rosemary, and a pinch of red pepper flakes, if using. Cook over low until thickened and gently bubbling, 15 to 20 minutes. Season with remaining ¾ teaspoon salt and several grinds pepper.
  • Cook pasta according to package directions. Reserve ½ cup pasta cooking water and drain. Add pasta and ¼ cup pasta cooking water to the skillet and toss to coat. Add more pasta water to thicken the sauce, if desired.
