  • Preheat oven to 350F degrees.
  • Layer the first 4 ingredients in a large casserole; lightly mix.
  • Spread mashed potatoes evenly over the top; sprinkle the cheese evenly over and sprinkle the pepper over the cheese.
  • Bake on middle oven rack for approximately 45 minutes or until hot and bubbly.
  • Alternately place in 4 to 6 small single serving casseroles; either way these casseroles freeze well.

Steps:

  • Saute breast pieces in butter and garlic.
  • Mix the stuffing and all ingredients called for on stuffing box.
  • In a separate bowl, mix the cream of chicken soup and turkey gracy together until smooth.
  • In a greased 9 x 13 casserole, add stuffing mix, cooked chicken, corn and top with gravy mixture.
  • Bake covered for about 45 minutes. Then uncovered for about 15 minutes.
  • This freezes well also!

  • Grease 3 qt casserole; in large mixing bowl, combine turkey and croutons; set aside.
  • In medium saucepan, combine remaining ingredients.

Steps:

  • For the turkey filling: Heat the EVOO in a large, deep skillet over medium-high heat and melt in the butter. Add the turkey and cook, crumbling the meat, until browned. Season with the Worcestershire and some salt and pepper. Add the celery, carrots, onions, potatoes and thyme and cook, partially covered, to soften the vegetables, 8 to 10 minutes. Stir in the flour and cook for 1 minute; add the stock and cook to thicken. Stir in the peas until warmed through. Transfer the mixture to a casserole dish.
  • For the stuffing: Heat a large skillet over medium heat and add the butter. When melted, add the celery, apples, bay leaf and onions. Add the poultry seasoning and salt and pepper if using and cook until tender, 12 to 15 minutes. Add the stuffing mix and moisten with the stock. Arrange the stuffing on top of the turkey filling and dot with butter.
  • Cool and store for a make-ahead meal, or bake to serve immediately. If baking immediately, bake at 375 degrees F until brown, bubbly and crisp on top, 15 to 20 minutes. If baking later, bring to room temperature and bake at 375 degrees F until brown, bubbly and crisp on top, 40 to 45 minutes.

  • Preheat oven to 375.
  • Spray a 13x9-inch baking dish with vegetable spray.
  • Mix the soups, sour cream and milk.
  • Arrange meat on bottom of dish and pour 1/2 of the soup mixture over.
  • Sprinkle with peas or vegetables, then spread the stuffing over.

  • Melt butter over low heat, add green pepper, celery, onion. Saute until tender, but not brown. Blend in flour and seasonings.   • In a large saucepan, bring the chicken broth to a boil.

Steps:

  • Whisk yogurt, lemon juice, olive oil, ketchup, garlic, red pepper flakes, salt, cumin, black pepper, paprika, and cinnamon together in a bowl.
  • Place chicken thigh halves into the yogurt marinade and coat them thoroughly on all sides. Cover bowl with plastic wrap and refrigerate 2 to 8 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Using 2 skewers for each kebab, thread half of the chicken thighs onto each pair of skewers making a fairly thick "log" shape.
  • Place kebabs on grill. Do not try to turn them until they begin to unstick from the grill, 3 or 4 minutes. Turn kebabs and grill the other side 3 or 4 minutes; turn. Continue cooking and turning until chicken is no longer pink in the center and the juices run clear, about 6 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
