SECRET RECIPE CHICKEN FRICASSEE

This was my Grandma's secret family recipe from her French ancestors. I have never seen a recipe like this on any site. It's a rich creamy sauce over chicken...great with mashed potatoes. A great dish for Easter or Christmas.

Steps:

  • Mix flour and margarine together in a saucepan over medium heat, stirring until the flour and margarine form a paste.
  • Whisk cream into flour mixture about 1/2 cup at a time until smoothly combined; whisk in chicken broth and parsley. Bring sauce to a simmer, whisking constantly until thickened.
  • Whisk egg yolks and lemon juice together in a bowl.
  • Whisk egg yolk mixture slowly into cream mixture, about 1 tablespoon at a time, until the sauce barely comes to a simmer and coats the back of a spoon. Do not boil.
  • If thicker sauce is desired, whisk cornstarch and 1/4 cup of sauce in a small bowl; stir cornstarch mixture back into sauce until thickened, about 2 minutes.
  • Stir chicken breast pieces into sauce until chicken is heated through.

Steps:

  • Pat chicken dry and sprinkle all over with salt and pepper.
  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté chicken in 2 batches, skin side down first, turning over once, until browned, 10 to 12 minutes total per batch. Transfer to a plate.
  • Pour off all but 2 tablespoons oil from skillet, then cook shallots, garlic, and bay leaf over moderate heat, stirring occasionally, until shallots are softened, about 2 minutes. Add wine and bring to a boil. Stir in cream, broth, and 1 tablespoon tarragon, then add chicken, skin side up, and simmer, covered, until just cooked through, 20 to 25 minutes. Transfer chicken with tongs to a platter and keep warm, loosely covered. If necessary, boil sauce until thickened slightly.
  • Stir in lemon juice, remaining 1/2 tablespoon tarragon, and salt and pepper to taste. Discard bay leaf; pour sauce over chicken.

3 1/2 to 4 pounds chicken pieces with skin and bone
3/4 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons vegetable oil
1/2 cup finely chopped shallots
1 garlic clove, finely chopped
1 Turkish or 1/2 California bay leaf
1/2 cup dry white wine
1 cup heavy cream
1/2 cup reduced-sodium chicken broth
1 1/2 tablespoons finely chopped fresh tarragon
1/4 teaspoon fresh lemon juice

Steps:

  • Before anything, prep the broccoli. Thaw in a covered, microwave-safe bowl with 2 tablespoons of water in the bottom. Cook broccoli for 3-4 minutes, long enough to defrost it, but not cook it completely. If using fresh broccoli, skip this step.
  • Melt the butter in a pot or dutch oven.
  • Add onion and cook until translucent.
  • Add flour to the onion and butter in the pan and stir until combined.
  • Cook flour mixture for about a minute.
  • Add stock.
  • Stirring constantly, heat until mixture comes to a boil and thickens.
  • Add the rest of the ingredients.
  • Once the fricasse reaches a simmer turn the heat down to medium, cover and cook for ~30 minutes, stirring occasionally. It's done when the vegetables are tender.

1 1/2-2 lbs cooked turkey, chopped
1 medium onion, chopped
8 ounces mushrooms, sliced
2 -3 carrots, chopped
2 -3 stalks celery, chopped
16 ounces frozen chopped broccoli (or fresh if you've got it)
1/2 cup flour
4 tablespoons butter
4 cups stock (chicken or turkey)
salt and pepper

LAMB FRICASSEE

This is an adopted recipe. I tried it out with my family and they love it! It was much simpler to make than I thought it would be with a lamb recipe. Fricassee is pronounced free-cah-seh and it means a stew made with spinach, lemon, eggs and oil. This is a Greek dish.

Steps:

  • Cut the lamb in portions.
  • Melt a tablespoon of butter in a pot and brown the lamb in it.
  • Strain excess fat. Take out the lamb.
  • Add the rest of the butter, salt& pepper, the lettuce, the onions and the lamb.
  • Cover and simmer for about 1 hours Stir.
  • Don't fret about not having any water in the stew. The veggies will provide it as they cook.
  • Prepare the avgolemono sauce, by beating together the eggs, lemon juice and flour (I use about 2 tsp).
  • Just before serving, pour the avgolemono in the pot, simmer lightly and serve hot.
  • Note: With 2 - 3 (2 - 3 lbs) heads of lettuce and 3 lbs of green onions, you will need a pretty big pot to hold all the chopped veggies. These will cook down to half the raw amount.
