Steps:
- Heat a stovetop ridged grill pan, large nonstick skillet or electric contact grill.
- Meanwhile, assemble paninis by laying bread on cutting board; coat with non-stick spray, turn over.
- Spread 4 slices bread with 1 T chutney each.
- Top remaining 4 slices bread with the turkey, onion, roasted peppers and cheese.
- Cover with other slices bread, chutney side down.
- Grill 4-5 minutes, turning once, until cheese melts.
- Remove to cutting board and cut each panini in half crosswise.

- Preheat the oven to 450 degrees F.
- Place the tomatoes on a rimmed baking sheet. Drizzle with 1 tablespoon olive oil and sprinkle with the salt. Toss well to coat. Roast the tomatoes until beginning to pop and blister, about 15 minutes.
- Meanwhile, spread 1 tablespoon pesto on 4 slices of bread. Spread 1 tablespoon marinara on the other 4 slices. Place a slice of mozzarella on each slice of bread. Divide the turkey evenly on 4 slices of bread and top with some of the blistered tomatoes. Sprinkle each sandwich with 1 tablespoon Parmesan. Top with the remaining slices of bread and press gently.
- Heat a large skillet over medium heat. Add half of the remaining oil to the skillet and add 2 sandwiches. Place a lid slightly smaller than the skillet on top of the sandwiches and press down. Cook until golden brown, about 3 minutes. Flip the sandwiches and repeat on the second side. Continue with the remaining sandwiches. (Alternatively, you can use a panini press.) Serve warm.

- Preheat a panini press according to manufacturer's instructions.
- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Meanwhile, melt the butter in a large skillet over medium heat. Cook and stir the garlic and onion until the onion has softened and turned translucent, about 10 minutes. Stir in the spinach and cook until wilted, about 3 minutes more.
- While the onions and spinach are cooking, stir together the mayonnaise, minced chipotle peppers, and adobo sauce in a small bowl. Spread the mayonnaise over 4 slices of focaccia bread. Place a slice of cheese onto the 4 slices, then divide the turkey among the sandwiches. Place 2 strips of bacon onto each sandwich and top with the spinach mixture. Place the remaining slices of bread onto the sandwiches.
- Cook the sandwiches in the preheated panini grill according to manufacturer's directions until crispy and golden brown, about 5 minutes.

- Preheat panini press or other sandwich maker--I use a George Foreman grill.
- Spread 4 slices of bread with pesto on one side and the other 4 slices of bread with mayonnaise.
- Divide the turkey, tomato slices, onion slices, and cheese equally among mayonnaise-dressed bread slices.
- Top with remaining bread slices, pesto side down; brush tops with butter.
- Brush the bottom of the panini press with butter.
- Add 2 sandwiches, close lid, and cook about 5 minutes or until lightly browned and cheese is melted.
- Repeat to make the other two sandwiches.
- Cut each sandwich in half and serve.

- Mash the avocado and the mayonnaise together in a bowl until thoroughly mixed.
- Preheat a panini sandwich press.
- To make the sandwiches, split the ciabatta rolls in half the flat way, and brush the bottom of each roll with olive oil. Place the bottoms of the rolls onto the panini press, olive oil side down. Place a provolone cheese slice, half the spinach leaves, half the sliced turkey breast, and a sliced roasted red pepper on each sandwich. Spread half of the avocado mixture on the cut surface of each top, and place the top of the roll on the sandwich. Brush the top of the roll with olive oil.
- Close the panini press and cook until the bun is toasted and crisp, with golden brown grill marks, and the cheese has melted, about 5 to 8 minutes.

- Stir cranberry sauce, mayonnaise and chipotle chile in a small bowl until well-mixed.
- Spread cut surfaces of bread with cranberry mixture; place 1/2 of spinach (or lettuce) on each of two slices of bread, then an onion slice each, then 1/2 the turkey each, then a slice of cheese on each; place the other two slices of bread on top of each stack and slightly flatten by hand.
- Brush both outer sides of sandwiches with olive oil.
