KISIR (TURKISH BULGUR WHEAT SALAD)

This is not a traditional Turkish Kisir, but the best I can do with the ingredients available in local stores. The salad is simple, and it's good for a light summertime meal.

Kisir (Turkish Bulgur Wheat Salad) image

Steps:

  • Mix bulgur and water and set aside for 30 minutes, until all of the water is absorbed. (There is a special kind of bulghur used in Turkish Kisir, but any bulgur or cracked wheat that can be prepared in this way will work).
  • Add remaining ingredients, adding the red pepper paste last. (Trader Joe's makes Red Pepper Spread with Eggplant and Garlic, which works pretty well. The Turkish spread is called Ajvar (Ayvar/Hayvar/Havyar), and it is much more spicy).
  • Refrigerate and serve cold.

1 cup boiling water
1 1/2 tablespoons olive oil
1 tablespoon lemon juice
1 cup fresh Italian parsley (1/2 bunch, chopped)
1/4 cup fresh mint leaves (chopped)
1 large roma tomato (seeded and diced)
2 green onions (chopped)
1/2 teaspoon salt
black pepper (to taste)
cayenne pepper (to taste)
4 teaspoons red pepper paste (or Ajvar)

Steps:

  • Mix all the ingredients together and let it marinate for at least a half hour in the fridge then serve.
  • When pomegranates are in season, I substitute the grape, makes for eye catching colour.

1 medium cooking onion, chopped and sauteed
2 cups bulgur (add 4 cups of boiled water in a bowl and set aside)
3 freshly squeezed lemons
1/2 cup finely chopped parsley
1 large tomatoes, diced
1/4 teaspoon cumin
1/4 teaspoon coriander
1/4 teaspoon paprika
1 cup quartered red seedless grapes or 1 cup quartered green seedless grape
1/4 cup extra virgin olive oil
salt

  • While waiting the water to be absorbed by Bulgur wheat, chop all the herbs finely and wash the lettuce leaves. Dry the lettuce leaves and set aside.
  • Heat 3 tbsp of olive oil in a pan and saute finely chopped onion with tomato paste for 5 minutes.
  • Combine the onion and tomato paste mix with the Bulgur Wheat and mix them well. And then, add the lemon juice, pomegranate molasses syrup and the all remaining ingredients to the Bulgur Wheat mix and combine all very well.
