TWO-LAYER KEY LIME PIE

I have a good friend that loves Key Lime Pie. I saw this in the current issue of "Bon Appetit" and immediately baked one up for her. She was not dissapointed. She said this version was one of the best she's ever tasted! I agree.

Two-Layer Key Lime Pie image

Steps:

  • Preheat oven to 350.
  • Using on/off turns, blend granola in a food processor until coarsely ground.
  • Transfer granola into a mixing bowl.
  • Add cracker crumbs, melted butter, and sugar.
  • Press the mixture into a 9-inch diameter deep dish glass pie plate.
  • Bake for 8 minutes, or until crust is golden brown.
  • Remove from oven and let cool completely.
  • Turn the oven down to 300.
  • Meanwhile, whisk condensed milk, lime juice and egg yolks in a bowl to blend.
  • Pour into the pie crust.
  • Bake about 25 minutes, or until the mixture is set.
  • Cool to room temperature.
  • With an electric mixer, beat cream cheese, condensed milk, lime juice, sugar and vanilla in a large mixing bowl.
  • Pour over the cooled baked layer.
  • With a butter knife, spread evenly and smooth out the top.
  • Cover and refrigerate until firm, at least 4 hours.
  • Top with sweetened whipped cream or Cool Whip, if desired.

  • CRUST Preheat oven to 350 F. Using on/off turns, blend granola in processor until coarsely ground. Transfer granola to medium bowl. Mix in graham cracker crumbs, melted butter and sugar. Press crumb mixture over bottom and up sides of 9 inch diameter deep dish glass pie dish. Bake until crust is golden brown, about 8 minutes. Reduce oven temperature to 300 F. Remove crust from oven and cool completely. BAKED LAYER Whisk condensed milk, lime juice and egg yolks in medium bowl to blend. Pour into pie crust. Bake until custard is set, about 25 minutes. Cool to room temperature. CHILLED LAYER 1 Using electric mixer, beat cream cheese, condensed milk, lime juice, sugar, and vanilla in large bowl. Pour over cooled baked layer; smooth top. Cover and chill until firm - at least 4 hours. 2 Pipe sweetened whipped cream decoratively around edges of pie.

KEY LIME PIE

I came up with this on the fly, after a HUGE craving for Key Lime pie set in. It's basically the same recipe that I used years ago to make "cherry cheese cake", which came from a magazine. You might want to start out with only 1/3 cup lime juice - then add the remainder, if the filling isn't tart enough. My family and friends like the tartness better, but the key limes are a little mild. Some times If I'm making two pies, use 3 full pkgs of cream cheese. Meaning each pie gets 14oz....recipe is ver versatile.

Steps:

  • Let cream cheese soften at room temperature for at least an hour.
  • Beat with a mixer on low speed for about a minute.
  • Add eagle brand milk, and mix on low speed til creamy and well combined.
  • Add vanilla and key lime juice, and stir with a spoon (important to not use mixer at this point), til all juice is incoportated.
  • I'm laughing at my cookbook terms - just make sure it's well mixed.
  • Chill at least one hour. Top with whipped cream, garnish with lime slices if desired.

Steps:

  • Make crust:
  • Preheat oven to 350°F with rack in middle. Butter a 9-inch pie plate.
  • Pulse together graham crackers, almonds, and sugar in a food processor until finely ground. Transfer to a bowl and stir in butter. Press crumb mixture evenly onto bottom and up side of pie plate. Bake until lightly browned, 8 to 10 minutes. Cool completely. (Leave oven on.)
  • Make filling and bake pie:
  • Gently whisk together filling ingredients in a medium bowl until smooth and pour into crust. Bake until just set in center, 15 to 20 minutes.
  • Cool completely (filling will set as it cools). Chill pie, loosely covered, at least 8 hours.

  • Squeeze juice from 4 lg or 6 small Key Limes and grate rind; set aside.
  • Using a whisk beat egg yolks until buttercup yellow.
  • Add about half the condensed milk, using whisk.
  • Blend well and add remaining milk.
  • Add half the lime juice and blend slowly.
  • Add remaining juice and blend.
  • Add grated rind; mix and pour into chilled pie crust.
  • Refrigerate 4 hours.
  • May be frozen.
  • To serve, slice while still frozen and let stand about 10 minutes.
