ABSOLUTELY ULTIMATE MARINADE
This has been the secret recipe in my family for years. All of our guests rave about it! The only downfall is that we always wind up hosting! This works great with chicken and steak. Try some of each.

Steps:
- Place the sesame seeds in a dry skillet over medium heat. Cook and stir for 5 minutes, or until golden brown and fragrant.
- In a medium bowl, mix toasted sesame seeds, green onions, garlic, tahini, soy sauce, white sugar, red wine vinegar, and pepper. Place desired meat in the mixture, cover, and marinate as long as you like, but overnight is best. Grill as desired.

ULTIMATE EASY MARINADE
You'll have them begging for more with this quick and easy marinade. Make copies of the recipe. Everyone you "treat" will ask for it!

- Tenderize meat with fork.
- Cover completely with marinade in stainless steel bowl or ziplock baggie.
- Refrigerate for 24 hours.
- Grill over medium heat.
ULTIMATE FLANK STEAK MARINADE
I adapted this from a recipe I got off the myrecipes.com site. It is a wonderful marinade for flank steak. The great thing about this recipe is that you can serve the steak alone and it is still flavorful or you can top with yoru favorite sauce. Marinade time (3 hours to overnight) is not included in prep time. I hope you enjoy!

Steps:
- 1. Place garlic, salt, pepper, and thyme on a cutting surface adn use a large knife to chop together until mixed.
- 2. Transfer mixture to a large ziplock bag. Add soy sauce and oil; seal and press bag gently to combine ingredients.
- 3. Place steak in the bag and seal. Turn several times to coat meat.
- 4. Refrigerate, turning several times, for at least 3 hours and up to overnight.
- 5. To cook meat: preheat broiler to high and arrange rack 6 inches from heat source. Remove meat from bag and pat dry; discard marinade. Broil on a broiling pan for 7 minutes. Turn meat over and broil 5 to 7 minutes longer. To check for doneness, test with the tip of a sharp knife. If juices run red, broil 1 to 2 minutes longer, until instant-read thermometer reads 140 degrees F (for medium rare). Let steak rest for 10 minutes. Working against the grain, cut into thin slices with a knife.

- Ginger, Cumin and Tomatoes. ½ tsp ground ginger. ½ tsp ground cumin. ½ tsp black pepper. Pinch of salt. 1 clove of garlic, minced. ¼ red onion, sliced. 5 cherry tomatoes, finely chopped.
- Mediterranean. 1 tsp chopped black olives, ½ tsp capers. ½ lemon, juice and zest. ½ tsp dried basil. Fresh parsley leaves, small sprig, finely chopped. Pinch of black pepper.
- Orange and Soy. 1 tsp soy sauce. ½ orange, juice and zest. ½ tsp rosemary. Fresh parsley, small sprig, finely chopped. Pinch of black pepper. Pinch of sea salt.
- Thai Lemongrass. 1 tsp Thai curry paste. ½ inch lemongrass, finely chopped. Fresh coriander leaves, small sprig, finely chopped. Juice of half a lime.
- Citrus, Herb and Black Onion Seeds. Juice of half an orange. Zest of half a lemon. Fresh parsley leaves. Fresh coriander leaves. 1 tsp black onion seeds.
- Mild Curry. ½ tsp curry powder. ¼ tsp garam masala. ½ tsp ground cumin. Fresh coriander leaves, small sprig, finely chopped. ½ tsp turmeric. Pinch of sea salt. Pinch of black pepper.
