UNCLE AL'S SOS
Uncle Alphonso Stegall was my mother, Lucille's, youngest Uncle. He was raised on a West Texas Ranch in the early 1900's. He joined the Navy and was a cook during WW1. After the military he worked the rest of his life as a cook. He would come to visit us occasionally and held us spellbound with his adventurous stories. He would make this recipe for us children. Mom said he first made it for us with chipped beef and we didn't like it so he replaced the chipped beef with hamburger meat and we loved it.

Steps:
- On medium heat, brown hamburger meat with the onion in a skillet. In another skillet, add the lard and heat on medium high heat. Add the flour and stirring constantly, cook until the mixture is lightly browned, being careful not to burn the mixture. Add the milk and continue to stir constantly until the gravy is thickened. Salt and pepper the gravy to taste and add the hamburger meat. Spoon the mixture over rice. Note: If the mixture is too thick, add a little milk to thin slightly. Sometimes we would have this for breakfast and spoon the mixture over biscuits.
UNCLE AL'S BBQ SAUCE
A sweet yet flavorful sauce that is great on BBQ or chicken nuggets or potato chips or a bologna sandwich. We used it on taco's tonight. Just Great.

- In sauce pan melt margerine and saute onions until tender. Do not burn.
- Add onions and all other ingredients to blender. Blend until liquid.
- Pour in pan and heat until sugar disolves.
- Add ground red pepper as needed for heat.

- In a large saucepan over medium heat, mix together the ketchup, tomato sauce, brown sugar, wine vinegar, molasses, liquid smoke and butter. Season with garlic powder, onion powder, chili powder, paprika, celery seed, cinnamon, cayenne, salt and pepper.
- Reduce heat to low, and simmer for up to 20 minutes. For thicker sauce, simmer longer, and for thinner, less time is needed. Sauce can also be thinned using a bit of water if necessary. Brush sauce onto any kind of meat during the last 10 minutes of cooking.

UNCLE COOPER'S BARBECUE SAUCE
This barbecue sauce recipe has been passed down from generation to generation in my family for more than a hundred years. I remember as a small boy, in the days of the stationary, steam-engine driven, wheat thrasher. We would have a huge dinner for all the farmers who helped with the threashing. My family always served goat barbecue. A great treat to all who attended. This barbecue sauce goes great on baked beans, pasta and potato salads, and any kind of meat, and it will definitely add some zip to your Mexican dishes.
