TURKEY CABBAGE ROLLS
This is my version of cabbage rolls using ground turkey instead of ground beef. This dish freezes well, so you can have half for dinner and freeze the other half for another time. Mashed potatoes make a good side dish.

Steps:
- In a pot, bring 1 cup water and rice to a boil. Reduce heat to low, cover and simmer for 20 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch casserole dish.
- Bring a large pot of water to boil. Reduce heat to low and place cabbage leaves in pot. Simmer 4 to 5 minutes, until tender. Drain leaves and set aside.
- Heat oil in a skillet over medium heat and cook turkey and onion until turkey is brown and onion is tender. Transfer turkey and onion to a bowl, cool slightly, and mix in cooked rice, egg and 1 can tomato sauce. Season with salt and pepper.
- In a separate bowl, mix 1 can tomato sauce, tomato paste, water, brown sugar, lemon juice and Worcestershire sauce.
- Scatter carrot slices evenly over bottom of casserole dish. Spread cabbage leaves on a flat surface and place about 2 tablespoons turkey mixture in the center of each leaf. Fold edges of leaves over filling, then roll into logs. Place cabbage rolls seam side down in dish over carrots. Pour sauce evenly over rolls.
- Cover and bake 1 hour in the preheated oven. Remove cover during last 10 minutes of cook time. Allow to sit 5 minutes before serving.

'UNSTUFFED' CABBAGE WITH A KICK
This is an alteration on a typical stuffed cabbage recipe. It's healthy, low-fat, low-carb, and a bit spicy. You can't go wrong with this recipe! You may omit the red pepper and cayenne if you do not like spicy foods, or increase like we do! We serve this over brown rice to make it more of a whole meal. We love it! I used roasted garlic-flavored tomato sauce for extra 'kick.'

Steps:
- Heat a large skillet over medium-high heat. Cook and stir ground turkey in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Transfer cooked turkey to a bowl.
- Heat olive oil in the skillet over medium heat; saute onion in hot oil until translucent, about 5 minutes. Add garlic to onion; saute until fragrant, about 1 minute.
- Pour diced tomatoes and tomato sauce over the onion mixture; season with Italian seasoning, basil, red pepper flakes, cayenne pepper, salt, and black pepper. Reduce heat to medium-low and simmer tomato mixture until the tomatoes are softened, about 10 minutes.
- Stir cabbage into the tomato mixture; continue cooking until cabbage is tender, 20 to 25 minutes.
- Stir ground turkey into the mixture; cook to reheat the turkey, 1 to 2 minutes.

UNSTUFFED CABBAGE ROLL
This is a quick and easy main dish. My kids don't even like cabbage, but they love this. I usually try to serve it with green beans, new potatoes, corn, and a pan of corn bread. They eat over half the pan every time. Also, the longer it stands the better it tastes.

- Heat a Dutch oven or large skillet over medium-high heat. Cook and stir beef and onion in the hot Dutch oven until browned and crumbly, 5 to 7 minutes; drain and discard grease.
