VANILLA-AND-CHOCOLATE SHORTBREAD SWIRLS
Two flavors of dough are formed into a single log, then sliced and baked in these tree ring-like cookies. Martha gilds the lily with milk chocolate "bark" and pistachio "moss" for a unique faux-bois effect.

Steps:
- In a medium bowl, whisk together flour and salt.
- In the bowl of a stand mixer fitted with the paddle attachment, cream together butter, confectioners' sugar, and vanilla on medium speed until light and fluffy, about 2 minutes. Stop mixer and add flour mixture; mix on low speed until just combined. Remove half the dough; divide into two equal pieces, wrap in plastic, and set aside while you make the chocolate dough.
- In a small bowl, stir together cocoa, espresso, and 2 tablespoons hot water. Add cocoa mixture to remaining cookie dough and mix on low speed until color is uniform, scraping down sides of bowl as needed.
- Place half the chocolate dough on a sheet of parchment and cover with a sheet of plastic wrap. Roll dough into a 14-by-10-inch rectangle (dough will be very thin but can be easily patched if it tears). Set aside, still covered with plastic. Repeat rolling process with remaining chocolate dough and both pieces of vanilla dough.
- Place one sheet of chocolate dough on work surface and remove plastic. Remove plastic from one sheet of vanilla dough and invert, still attached to its parchment backing, onto chocolate dough, pressing gently with the palm of your hand to adhere. Gently peel back parchment paper to remove. Continue layering with remaining chocolate and vanilla doughs. Position dough with one short side parallel to edge of work surface, then roll dough into a tight spiral. Wrap log in parchment and place in a cardboard paper-towel tube that has been cut open from end to end (this will help retain the round shape of the log of dough). Refrigerate until firm, at least 1 hour or overnight.
- Preheat oven to 325 degrees. Line two rimmed baking sheets with parchment. Trim ends from dough. Slice dough 1/4 inch thick. Roll each cookie between sheets of parchment into an oblong disk about 3 inches long and 1/8 inch thick; transfer to prepared sheets. Bake until crisp, 8 to 10 minutes. Transfer sheets to wire racks and let cool completely. Working with one cookie at a time, dip an edge in melted chocolate and coat with pistachios. Transfer to fresh parchment-lined baking sheets and let stand until chocolate is set, 45 to 60 minutes.

- Heat oven to 180C/160C fan/gas 4 and line 2 baking sheets with baking parchment. Put the butter and icing sugar in a large bowl and beat with an electric hand whisk for about 5 mins until pale and fluffy. Add the vanilla extract and beat again until fully incorporated.
- Sift in the flour, cornflour and baking powder, and fold into the mixture using a spatula until combined (the dough should have a tacky consistency). Spoon the dough into a piping bag fitted with a large star-shaped nozzle. If all the mixture doesn't fit, do it in 2 batches.
- Pipe swirly circles 5cm diameter onto 2 baking sheets making sure there are 3cm spaces between each swirl.
- Bake for 10-12 mins, swapping the trays over halfway through the cooking time so the biscuits are evenly baked, until pale golden and cooked through. Leave to cool on the baking sheets for a few mins, then transfer to wire racks.
- While the biscuits cool, make the filling. Put the softened butter in a large mixing bowl and add the icing sugar. Stir together initially with a wooden spoon then switch to electric beaters or a whisk to get the buttercream fluffy and smooth. Add the vanilla extract and beat once more to combine. Transfer the buttercream to a piping bag and snip off the end.
- Turn the biscuits over so their flat side is facing up then pipe buttercream over half of the biscuits and spread a little jam on the rest. Sandwich a jam covered biscuit together with a buttercream one and repeat until all the biscuits are used up.

A Delicious buttery cookie that tastes lovely and looks great, layed out on a plate to have with a cuppa or fill a nice glass container full of these little cookies and give as a gift to someone special. - Preheat oven to 180 degrees celsius.
- Place butter, sugar and vanilla in a bowl and beat till light and fluffy.
- Add egg and beat well.
- Add plain flour, rice flour and baking powder and mix to a dough.
- Turn out dough and knead gently.
- Roll out to 40 x 25cm, Spread jam over dough leaving a 4cm edge to enclose the jam, Roll up.
- Place in fridge for 30 minutes then slice into 1cm cookies.
- Bake at 180degrees celsius for 15 minutes.

- Preheat oven to 350 degrees.
- In a large bowl, cream 1 c + 1 T butter and sugar until fluffy.
- Sift the flour, baking powder and salt together.
- Add the flour alternately with the milk to the butter/sugar (begin and end with dry ingredients); add the vanilla.
- In a small mixing bowl, beat egg whites until stiff peaks form and fold gently by hand into the batter.
- Heat jelly until melted; cool slightly.
- Remove 1 c of batter and add jelly; mix well.
- Add enough food coloring to make the batter pink.
- Pour the white batter into a greased and floured Bundt pan.
- Pour jelly batter on top.
- Swirl the raspberry mixture into the cake.
- Bake at 350 degrees for 45-50 minutes or until the cake tests done.
- Turn out on a wire rack to cool completely.
- To make the glaze, combine the confectioners sugar, butter and vanilla extract.
- Add in enough milk to produce a slightly runny consistency.
- Pour the glaze over the cake and drizzle with sieved raspberry jam.
