UKRAINIAN BORSCH WITH PYRIZHKY (PYROHY) (PIROSHKI)

This is a hearty meat soup made with beets, onions, tomatoes and cabbage, topped with a dollop of sour cream. Serve it with its traditional partner, meat filled pastries, pyrizhky.

Ukrainian Borsch With Pyrizhky (Pyrohy) (Piroshki) image

Steps:

  • Day before: In 8-quart kettle, place beef, marrowbone, 1 Tablespoon salt and 2 quarts water. Bring to boiling; reduce heat; simmer, covered, 1 hour. Add tomatoes, quartered onion, celery, parsley, black peppers and bay leaves; simmer, covered, 2 hours.
  • Remove from heat. Lift out beef. Discard marrowbone. Strain soup in colander. (There should be 9 or 10 cups.) Return soup and beef to kettle. Add cabbage, carrot, chopped onion, 2 Tablespoons fresh dill, the vinegar, sugar and 1 1/2 teaspoons salt; bring to boiling.
  • Reduce heat; simmer, covered, 30 minutes, or until beef and vegetables are tender. Refrigerate overnight. Next day, skim off fat. Remove beef; cut into 1-inch cubes; coarsely chop 1 1/4 cups of the meat for the pyrizhky; return rest to soup along with beets. Makes 3 1/2 quarts.
  • FOR THE PYRIZHKY: Remove patty shells from package; let stand at room temperature 30 minutes to soften.
  • Meanwhile, in hot butter in small skillet, sauté onion 2 minutes. Add 3 Tablespoons sour cream, the 1 1/4 cup chopped beef, dill, salt, pepper; mix well; reserve and cool.
  • Preheat oven to 425°F On lightly floured pastry cloth, roll EACH patty shell to make oblong 8 by 5 inches; cut in HALF crosswise. Spread a rounded tablespoon of filling on half of EACH piece. Fold other half over filling; crimp edges to seal; cut slits in top.
  • Place on cookie sheet lined with heavy brown paper or parchment paper. Brush with egg yolk beaten with 1 Tablespoon water. Bake 15 minutes, or until puffed and golden. Makes 12.
  • Meanwhile, heat soup gently to boiling. Serve with sour cream, dill and the warm pyrizhky.

snipped fresh dill or dill weed
1 (10 ounce) package frozen patty shells
2 tablespoons butter or 2 tablespoons margarine
1/4 cup coarsely chopped onion
3 tablespoons sour cream
1 1/4 cups coarsely chopped cooked beef
1/2 teaspoon dried dill
1/2 teaspoon salt
1 dash pepper
1 egg yolk
1 tablespoon water

UKRAINIAN PEROGIES, FOR BEGINNERS

Nothing is better than a fresh perogy, stolen from the bowl just after it has been cooked. Once a year, our family would spend a whole Saturday making these so we would have a stash to freeze and use for the next year. Fairly easy to make, but the instructions are just very descriptive.

Ukrainian Perogies, for Beginners image

Steps:

  • Dough--------------.
  • Mix dough ingredients together.
  • You may have to add more liquid or flour to make the dough soft and somewhat sticky.
  • Turn onto a floured surface and knead more flour into dough- just enough to make it easier to handle.
  • The dough will be slightly sticky.
  • Do not over-knead.
  • Place dough in an oiled bowl.
  • Cover and let rest for 30 minuets.
  • Filling-----------.
  • Cook onion in butter.
  • Mix with potatoes, and add cheese while the mixture is still hot.
  • You may substitute Cheez Whiz for the cheddar.
  • Let filling cool before using (place in fridge.) If you are using the alternate filling, simply mix those ingredients together.
  • Manufacturing--------.
  • Set a large pot of water to boil.
  • Form walnut-sized balls of the filling.
  • Roll out dough on floured surface fairly thinly (3 millimeters, or 0.125 inch).
  • You will probably need to add flour as you roll.
  • Cut out circles approximately 7 1/2 centimeters (3 inches) in diameter (a wider-mouthed glass should do fine.) Press scraps into a ball.
  • Place filling ball in center of dough circle.
  • If the dough has a less-floury side, keep that side up.
  • Fold dough over ball, and pinch edges to form a half circle.
  • To prevent perogies with"horns", I pinch at the top ("90 degree mark") of the perogy first, then pinch at the 180 and degree edges, working up to the 90 degree mark.
  • You can cheat pinching the perogies by smearing water on the filling side of the dough at the edges, and keep your fingers floured when you pinch (on the non-filling side.) In order to prevent perogies from drying out, keep finished perogies on a floured surface, and cover with a floured clean dishcloth.
  • Place several perogies in boiling water.
  • Stir once, gently with a slotted spoon.
  • Perogies are done when they float for a minute (this will take 2-3 minutes).
  • Melt about 1/2 cup of butter or margarine in microwave.
  • Rescue and drain the perogies with the slotted spoon.
  • Place in a bowl, drizzle with some melted butter, and gently shake to distribute the butter.
  • Cook, drain, and drizzle the other perogies in the same manner.
  • *Platzkies (pronounced "plutch-keys"): (The scrap dough is not tender enough to make into perogies, but make good"dumplings" by themselves.) Roll out scraps to approxamitely the same thickness as before.
  • Add minimal flour, and handle dough as little as possible.
  • Try to keep edges even.
  • Cut dough with a knife into strips about 8 cm (3 inches) wide.
  • Cut each strip into several triangles and/or squares.
  • Cook strips in water until they float.
  • Repeat draining and drizzling treatment as with perogies.

2 -3 cooked potatoes, mashed
1 cup grated cheddar cheese
2 -3 cups cottage cheese, drained (or use dry curd)
1/3 cup fresh dill, chopped
1 egg
salt and pepper (taste before adding egg!)

These are as authentic Russian as you can get without traveling to Russia. I received the recipe from my Russian language teacher in high school and have been making them ever since. The kids like them too! They take a little time to roll out - but then doesn't anything 'authentic' take a little time?

Steps:

  • In a medium skillet over medium heat, cook the ground beef until evenly browned; drain. Stir in the onion and cook with the beef until translucent. Sprinkle in salt, pepper and dill weed to taste. Allow to cool before using.
  • Dissolve the yeast in the 1/4 cup of warm water and place in a warm location until frothy, about 10 to 15 minutes. In a medium saucepan over low heat, warm the milk and gently whisk in the eggs, oil, sugar and salt. Remove from heat.
  • Place half the flour in a large mixing bowl and gradually stir in the milk mixture. Then add the yeast solution alternately with the remaining flour, stirring after each addition. Mix well. Knead until the dough forms a ball and does not stick to the bowl. (Note: Start with the 4 cups of flour. You may need to add more, a little at a time, as you knead the dough). Cover the bowl with a clean cloth. Set in a warm location and allow to rise until doubled in volume.
  • Remove dough from bowl and place on a lightly floured surface. Pinch off pieces approximately the size of golf balls. Roll the pieces into disks about 3 1/2 to 4 inches in diameter.
  • Fill center of each disk with a heaping tablespoon of the cooled meat mixture. Fold disks over the mixture and firmly pinch edges to seal. Arrange on a flat surface and allow to sit approximately 10 minutes.
  • In an large, heavy skillet or deep fryer, heat the oil to 375 degrees F (190 degrees C). Deep fry the piroshki in batches until golden brown on one side; gently turn and fry the other side. Remove and let drain on a plate lined with paper towels.

Traditional Russian Pirozhki image

Steps:

  • Place 1/2 cup milk in a cup or small bowl. Stir in sugar and sprinkle yeast over the top. Set aside until foamy, about 10 minutes. Pour the remaining milk into a large bowl.
  • Add the melted butter, egg, salt and 1 cup of flour to the large bowl with the milk. Stir in the yeast mixture. Mix in flour 1 cup at a time until dough pulls away from the sides of the bowl and doesn't stick to your hands. Cover the bowl loosely and set in a warm place to rise for about 1 hour. Dough should almost triple in size.
  • While you wait for the dough to rise, melt the remaining butter in a large skillet over medium heat. Add cabbage and cook, stirring frequently, until cabbage has wilted. Mix in the eggs and season with salt and pepper. Continue to cook, stirring occasionally until cabbage is tender. Set this aside for the filling.
  • Place the risen dough onto a floured surface and gently form into a long snake about 2 inches wide. Cut into 1 inch pieces and roll each piece into a ball. Flatten the balls by hand until they are 4 to 5 inches across. Place a spoonful of the cabbage filling in the center and fold in half to enclose. Pinch the edges together to seal in the filling.
  • Preheat the oven to 400 degrees F (200 degrees C). Line one or two baking sheets with aluminum foil. Place the pirozhki onto the baking sheet, leaving room between them for them to grow.
  • Bake for 20 minutes in the preheated oven, or until golden brown.
