Steps:
- Place a fine-mesh sieve over a medium bowl; set aside. In a medium saucepan, off heat, whisk together sugar, cornstarch, and salt. If making chocolate pudding, add cocoa powder. Very gradually (a few tablespoons at a time) whisk in milk, taking care to dissolve cornstarch. Whisk in egg yolks.
- Whisking constantly, cook over medium heat until the first large bubble forms and sputters. Reduce heat to low; still whisking, cook 1 minute. Remove from heat; immediately pour through sieve into bowl. Stir butter and vanilla into hot pudding.
- Place plastic wrap directly on surface of pudding (to prevent skin from forming); chill at least 3 hours and up to 3 days. Before serving, whisk pudding until smooth; divide among four serving dishes.
HOMEMADE VANILLA PUDDING

- In medium saucepan over medium heat, heat milk until bubbles form at edges. In a bowl, combine sugar, cornstarch and salt. Pour into hot milk, a little at a time, stirring to dissolve. Continue to cook and stir until mixture thickens enough to coat the back of a metal spoon. Do not boil. Remove from heat, stir in vanilla and butter. Pour into serving dishes. Chill before serving.

CHOCOLATE AND VANILLA OREO PUDDING
This is a simple, yummy dessert that is always a hit at picnics. In addition, fat-free or reduced fat substitutes work well.

Steps:
- Crush one bag of Oreos.
- Place crushed Oreos, butter and 1/2 cup of milk in microwave-safe bowl.
- Defrost for 2 minutes.
- Mix with electric mixer of beaters for 3 minutes.
- Press into bottom of 9 x 13 dish.
- Freeze for 30 minutes.
- Mix puddings separately. Follow package directions plus mix in 8 oz of cream cheese into each mix.
- Chill each for at least 15 minutes.
- When freezing and chilling is complete, layer vanilla pudding over Oreo crust.
- Layer chocolate pudding over vanilla pudding.
- Cover with cool whip.
- Crush 1/3 - 1/2 of remaining Oreos. Sprinkle on top of cool whip.
- Chill for 3 hours or overnight. You can also freeze if desired.

- Preheat oven to 350 degrees.
- in a medium bowl, combine cake mix, 2 eggs, 2/3 cup oil and 1 cup water. Stir until combined.
- pour into a 9x13 greased pan and bake for 30-35 minutes.
- meanwhile - combine instant pudding, milk and instant coffee granules until combined, Place in refridgerator to thicken.
- Cool cake completely. With the handle of a wooden spoon - poke holes all over your cake (about 1 inch apart). Spread pudding over cake evenly.
- Microwave your chocolate frosting for 20 seconds (make sure to take off the lid and foil cover). Stir and pour chocolate frosting over cake. Let sit in the fridge for 15 minutes (or longer).
