EGGPLANT BURGERS
This is the veggie burger supreme - the easiest and MOST ECONOMICAL burger of all. A single medium-sized eggplant (together with the usual trimmings) feeds a family of six. Use whatever types of cheese and burger toppings to suit your family's taste.

Steps:
- Place the eggplant slices on a plate, and cook in the microwave for about 5 minutes, or until the centers are cooked.
- Melt margarine in a large skillet over medium-high heat. Fry eggplant slices until lightly toasted on each side, and place one slice of cheese onto each one. Cook until cheese has melted, and remove from the skillet.
- Place eggplant on hamburger buns, and allow each person to top with lettuce, tomato, onion, and pickles, and dress with ketchup, mayonnaise and mustard.

VEGETABLE BURGERS WITH EGGPLANT AND TOMATO
Gussy up some couscous with chopped olives and red onion, and offer carrot and jicama sticks for crunch. Fill phyllo tart shells (from your store's frozen foods section) with vanilla pudding and sliced bananas for dessert.

Steps:
- Heat oil in heavy large skillet over medium heat. Sprinkle eggplant with salt and pepper. Add eggplant to skillet; sauté until brown, about 3 minutes per side. Add patties to same skillet. Sauté until patties and eggplant are cooked through, about 3 minutes per side.
- Blend mayonnaise and tarragon in small bowl; season with salt and pepper. Spread mayonnaise mixture on bottom half of each bread piece. Top with patty, eggplant, tomato, greens and bread.

Steps:
- Combine chickpeas, garlic, lemon juice, tahini, cumin, and salt in a blender and blend until smooth.
- Slice eggplants into four 1-inch (2 ½ cm) slices. Sprinkle eggplant slices with salt and let sit for 20-30 minutes, then pat dry.
- In a small bowl, stir together oil, paprika, garlic powder, red pepper flakes, salt, and pepper.
- Brush each side of the eggplant slices with the oil and spice mixture.
- Heat a pan or grill on medium-high heat and cook each eggplant slice for 3-4 minutes per side.
- Build your burger with the hummus sandwiched between two eggplant slices.
- Enjoy!

LAYERED EGGPLANT HAMBURGER CASSEROLE

- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet over medium heat, saute the ground beef, onion and garlic for 5 to 10 minutes. Drain excess fat. Stir in the tomato paste, water, tomatoes, parsley, thyme, oregano and basil. Set aside.
- Slice eggplant into 1/4-inch rounds. Place a layer of eggplant into the bottom of a lightly greased 9x12-inch glass baking dish. Then place a layer of the ground beef mixture over the eggplant, followed by a layer of sliced onion. Top this with 1/2 the breadcrumbs and cheese. Then repeat the layers: eggplant, ground beef mixture, sliced onion and remaining breadcrumbs and cheese.
- Cover and bake at 350 degrees F (175 degrees C) for 1 hour, remove foil and bake for 20 more minutes.

- Bring a medium pot of water to boil. First put in the kale, after two minutes add the frozen peas and cook for seven minutes. Two minutes before time is up add the broccoli florets. Drain and set aside to cool off a bit before you transfer it to a food processor.
- In the meantime, heat some olive oil in a small pan and sauté the onion for 2-3 minutes. Then add the minced garlic and cook for another minute.
- Place the cooked vegetables together with the chopped celery into a food processor and process for a couple of seconds. Make sure to leave some texture. Place in a medium bowl and stir in the oats, breadcrumbs, walnuts, and sautéed onion and garlic. Season with the Italian spice mix, soy sauce, mustard, salt, and black pepper.
