Steps:
- Combine Garlic Pepper Sauce and pizza sauce.
- Reserve until needed.
- Place the dough on an oiled pizza screen.
- (To oil the screen, spray with cooking spray, heat, and re-spray just before using.) Poke holes in dough with a fork to relieve air pockets.
- Spread with the pizza sauce, leaving a 1" border around the edge.
- Spread the cheese over the sauce and top with onion, mushrooms, green pepper strips and black olives.
- Bake in a preheated 450°F oven for 7 minutes.
- Allow to cool slightly before cutting into 8 slices.

VEGETARIAN MEDITERRANEAN PIZZA
This is a wonderful pizza! I got this recipe from the Alive magazine that I pick up at the health food store. Use whatever kind of crust you like. I make my own out of 1/2 whole wheat and 1/2 white flour. That gives you the goodness of whole wheat....but a lighter crust than using all whole wheat. I have added fresh spinach to the recipe...and it works wonderfully. For the best flavour, slightly blacken the grilled eggplant. My pic is not very good....but will post another when I make again. Enjoy!

Steps:
- Preheat oven to 450 degrees.
- Shape and stretch dough into a 12" circle.
- Sprinkle the counter with cornmeal. Place circle of dough on top of cornmeal; press down lightly; transfer to pizza pan.
- Spread bruschetta evenly over top. Sprinkle with basil and oregano.
- Evenly scatter spinach, artichoke hearts, sun-dried tomatoes, eggplant and both cheeses over top.
- Bake for 12 - 15 minutes.

This is my clone of the Mediterranean Pizza served at Schlotzsky's Deli, which I had to come up with because ours closed down.. It wasn't too hard to figure out though, because the ingredients are listed on the menu on their website, lol.. Tastes just like being there again.

- Preheat oven to 350.
- Spread the breads with the pesto.
- Top with desired amounts of black olives, red onion, tomatoes, and feta cheese.
- Lastly, cover with mozzarella.
- Bake for 10 minutes, or until cheese is melted.
- Note: You can substitute the sun dried tomatoes with fresh, diced tomatoes if you prefer.

- Place eggplant in a microwave-safe bowl with water and salt. Cover and microwave on High for 5 minutes or until tender; drain and set aside.
- Spread pizza crust with pesto, then top with eggplant, cheese and pine nuts. Grill over indirect heat for about 10 minutes or until cheese is melted and crust is crisp; top with basil.

EASY MEDITERRANEAN PIZZA
This is a great recipe for a different kind of pizza. It's heavy on the flavors, but you don't feel stuffed after eating it. The recipe was actually born of an experiment performed by myself and a friend on a Sunday night. Be creative, though... last time I made it, I spread pine nuts over the surface and it was terrific!

- Preheat oven to 350 degrees F.
- Brush pizza shell with olive oil.
- Spread pesto sauce thoroughly over the surface of the shell, leaving the edge as a crust.
- Top with olives, sundried tomatoes, artichoke hearts, wilted spinach leaves and cover with cheeses.
- Place pizza directly on oven rack for 10 minutes, or until cheese is melted from centre to edge.
- Allow to cool for 5 minutes before slicing.

- Thaw the store bought pizza dough in fridge or prepare from scratch. Roll it out and place it on a round non-stick pizza pan.
- Create little air pockets by poking the dough with a fork and brush with olive oil. Preheat the oven to 350 degrees and bake the dough until it's cooked half way through. Remove from the oven.
- After removing the pizza dough from the oven, brush the basil pesto sauce on top. Spread some alfredo sauce and then top with the veggies and cheese.
