GRILLED VEGGIE FRENCH BREAD PIZZA
This is something I came up with after I tried making a grilled veggie sandwich and found there was something missing. The olives and cheese give it that substance I was looking for.

Steps:
- Heat up your grill. I used a George Foreman grill. If you do not have a grill, you can use a hot skillet.
- Put your veggies in a bowl. Add olive oil, salt and pepper. Toss to coat.
- Put veggies on hot grill until they're nice and carmelized.
- Put your French bread in the oven until it's crispy on the outside.
- Slice your French bread in half. Place your olives on the bread and top with Mozzarela cheese. Put under the broiler until the cheese melts.
- Top with veggie mix.
- Enjoy.
- Feel free to customize by adding tomato sauce or a different mix of veggies, etc.

FRESH VEGGIE FRENCH BREAD PIZZAS
This is a great lunch or lite dinner with a salad. You can be flexible with the types of veggies you use, but these are my favorites.

Steps:
- Preheat oven to 400°F.
- Line baking sheet with foil, and treat with nonstick cooking spray.
- Scoop out a little of the middle out of each roll half.
- Place halves on baking sheet.
- Spoon dressing over each half and spread evenly.
- Layer veggies (or mix together) over dressing. (If using diced tomato, I like adding that first, then the other veggies, on top of the dressing--it's up to you).
- Sprinkle basil and garlic powder atop vegetables.
- Pop in the oven, and bake for 10 minutes until cheese melts or is crispy -- ovens vary.

FRENCH BREAD PIZZA (VEGETARIAN)
Pizza slices for those who like tofu, sounds very good, haven't tried this, but saw it in the local newpaper and thought someone out there might enjoy it.

Steps:
- Preheat oven to 450f degrees.
- Cut bread loaf in half widthwise, then each half again lengthwise to create 4 roughly equal pieces.
- Place the bread, cut side up, on a dry baking sheet.
- Place remaining ingredients in a food processor or blender, blend until they form a smooth paste.
- Spread the mixture evenly over the bread.
- Bake until tofu mixture is hot and bread toasted, about 10 to 15 minutes.
- Cut each pizza into individual slices.
FRENCH HERB VEGGIE LOAF
This is my version of the 1980 Kansas State Fair winner.

Steps:
- 1. Heat together Water, buttermilk and butter/margarine to 130 degrees.(Very warm) Mix together, 1 1/2 c flour, sugar, salt, yeast and garlic powder in large mixer bowl.
- 2. Add heated liquid to the dry ingredients and mix at medium speed for 3 minutes. Stir in another 1 1/2 c flour veggies, parsley and herbs to form a sticky dough. Turn out onto well floured counter and knead in as much flour as needed to make it soft, smooth and elastic. Knead in parmesan cheese a little as a time.
- 3. Place dough in a lightly oiled bowl, cover with plastic wrap and a towel and let rise to double. Punch down, divide into two equal portions and let rest covered for 5 to 10 minutes.
- 4. Roll each portion into a rectangle, using a little flour if needed to keep from sticking. Form into baguette shapes 12" long x 3" in diameter. Place on greased cookie sheet or parchment lined sheet that is dusted with cornmeal. Cover and let rise til doubled.
- 5. Preheat oven to 400 degrees and bake loaves for 20-30 minutes until golden brown and hollow sounding when tapped. approx. 200 degrees internal temp. Let cool slightly and turn out of pan to cool on a rack.

- Add the water, yeast and sugar to the bowl of your stand mixer (or to a large mixing bowl if you're making the bread by hand). Mix together with a fork and let sit for about 5 minutes.
- Once the yeast mixture is bubbly, add 5 1/2 cups of the flour and the salt (be sure the salt doesn't touch the yeast mixture directly - mix it in with the flour first).
- Mix on low speed (if using a stand mixer) until the dough comes together, adding the last half cup of flour as the mixer begins to knead the dough. Let the mixer knead the dough for about 3-4 minutes on low speed.

- Add the all purpose flour, yeast and sea salt to a large mixing bowl or your kitchen aid mixer. Mix in the water and stir well until incorporated. Cover the bowl loosely with a kitchen towel or plastic wrap and let it rest at room temperature for 2 to 3 hours. ( you may leave it overnight as well but it is not necessary )
- After about 2 hours check the dough and you should notice the surface dotted with bubbles. Turn the dough onto a floured surface and sprinkle it with a little flour. Shape it into a round loaf by folding it over on itself a few times. NO KNEADING Allowed!
- Meanwhile preheat your oven to 450"F with a pizza stone inside. I If you don't have a pizza stone preheat a cast iron dutch oven with the lid on instead). Place a baking dish with a couple of inches of water in it on the bottom rack to help create steam inside the oven for a crispy crust.
- Sprinkle a pizza peel or a cardboard box with some flour and place the bread loaf on top. Allow it to rest for 45 minutes while the oven warms up. Using a serrated knife make a few slits on top of the loaf.
