Velvety Pumpkin Soup image

Steps:

  • 1. Make a tasty pumpkin soup (onions, carrots, pumpkin, chicken stock)
  • 2. Add the foie gras cut in cubes and blend until smooth, add some extra chicken stock to have the right texture
  • 3. Sprinkle some olive oil over the cleaned sepia and grill shortly on both sides in a pan, cut in cubes and marinate with some paprika powder, cut the chicory and the parsley leafs in julienne, and mix with the sepia, season with some white balsamico vinegar
  • 4. Cut the brioche in slices and into rounds with a cutting ring, toast in butter and cover with a slice a cooked beetroot (supermarket) and top with a slice of Beaufort cheese(or any other hard cheese: cheddar etc) and toast until the cheese slightly melts
  • 5. Plating: poor some soup in a bowl and put some of the sepia/chicory/parsley mixture on top
  • 6. Serve the cheese brioche on the side

300 g homemade tasty pumpkin soup
250g duck foie gras
Some chicken stock
A dry alcohol (sherry type)
300g Sepia cleaned/grilled/diced
2 g Paprika powder
Parsley leaves and red chicory
4 slices of brioche
Beetroot (cooked)
Beaufort cheese (or any other hard cheese)

Steps:

  • In a large, heavy-bottomed pan, heat the oil with 25g butter. Add the onion and a pinch of salt and cook on a low heat for 10 mins or until soft. Add 60g bacon and cook for a further 5 mins until the bacon releases its fat. Then increase the heat to medium, add the pumpkin and stock and season. Bring to the boil, then reduce the heat to a simmer, cover with a lid and cook for about 40 mins until the pumpkin is soft. Pour in the cream, bring to the boil again and remove from the heat. Set aside some of the liquid, then blend the remaining pumpkin until smooth and velvety, adding liquid back into the pan bit by bit as you go (add more liquid if you like it thinner). Strain through a fine sieve, check the seasoning and set aside.
  • Melt the remaining butter in a pan over a high heat and fry the rest of the bacon with black pepper for 5 mins. Divide the bacon between four bowls, reheat the soup and pour over. To serve, sprinkle over the pumpkin seeds and drizzle with maple syrup.

Velvety Pumpkin & Black Bean Soup image

Steps:

  • Heat oil in a soup pot over medium high heat. Sauté your onions and cabbage with a pinch of salt to "sweat" the vegetables. You don't want to brown the vegetables - just cook them until they are soft and onions are opaque - approximately 10 minutes.
  • Add broth, tomatoes, black beans and pumpkin puree. Bring to a boil and reduce heat to medium low to simmer for 10 minutes or so.
  • Stir in cream, curry, cumin, cayenne and salt to taste. Simmer an additional 10 minutes and serve.

  • Heat butter in large saucepan over med heat until foam subsides.
  • Add leeks, mushrooms and cauliflower.
  • Cover and cook, stirring occasionally for 5 minutes.
  • Add stock and bring to boil.
  • Lower heat, cover and simmer for 10 minutes.
  • Transfer mixture to a food processor.
  • Add blue cheese and puree for 1 minute or until smooth.
