OLD-FASHIONED APPLE CRISP

Ina Garten's Old-Fashioned Apple Crisp, a recipe from Barefoot Contessa on Food Network, is best served warm with a scoop of vanilla ice cream.

Old-Fashioned Apple Crisp image

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9 by 14 by 2-inch oval baking dish.
  • Peel, core, and cut the apples into large wedges. Combine the apples with the zests, juices, sugar, and spices. Pour into the dish.
  • To make the topping, combine the flour, sugars, salt, oatmeal, and cold butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed until the mixture is crumbly and the butter is the size of peas. Scatter evenly over the apples.
  • Place the crisp on a sheet pan and bake for 1 hour until the top is brown and the apples are bubbly. Serve warm.

5 pounds McIntosh or Macoun apples
Grated zest of 1 orange
Grated zest of 1 lemon
2 tablespoons freshly squeezed orange juice
2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 1/2 cups flour
3/4 cup granulated sugar
3/4 cup light brown sugar, packed

One of the girls in my dorm gave me this recipe. She said when her uncle (a Vermont transplant) missed Vermont, her aunt prepared this for him. It is a wonderful substitute for a traditional apple pie and is great either alone or with vanilla ice cream.

  • Preheat oven to 375°. Place apples in a large bowl. Combine sugar and 1/2 teaspoon cinnamon; sprinkle over apples and toss to coat. Transfer to a greased 13x9-in. baking dish. Combine flour, brown sugar, oats, baking powder, nutmeg and remaining cinnamon; cut in butter until mixture resembles coarse crumbs. Sprinkle over apples. Bake until apples are tender, 50-60 minutes.   • Preheat oven to 375 degrees F. Butter a 9 X 13 baking dish. In a large bowl, toss together all the filling ingredients, and spoon into baking dish. Make the topping by tossing together the dry ingredients and adding the butter by using your hands to break up and mix it until the mixture is blended. Sprinkle the topping over the fruit and bake for 45 minutes or until apples are tender and topping is nicely browned. When you are ready to serve it, make the sauce by heating the maple syrup in a saucepan over moderately low heat for 5 minutes, or until heated through. Whisk in the vanilla and ice cream, whisking until the mixture is smooth. Serve the apple crisp topped with vanilla ice cream and the maple sauce. Enjoy!
