Steps:
- Preheat the broiler. Toss the shrimp, snap peas, garlic, thyme and olive oil in a large bowl; set aside.
- Put the potatoes in a pot and cover with water by 1 inch; bring to a boil. Reduce to a simmer and cook until fork-tender, about 10 minutes. Reserve 1/4 cup cooking water, then drain the potatoes and return to the pot. Add the buttermilk, 2 tablespoons butter, 1/2 teaspoon salt and a few grinds of pepper. Mash, gradually adding the reserved cooking water as needed. Stir in 1 tablespoon chives.
- While the potatoes are cooking, spread the shrimp and snap peas on a baking sheet. Broil until just cooked through and charred in spots, 6 to 8 minutes.
- Dot the shrimp and snap peas with the remaining 2 tablespoons butter and sprinkle with the lemon zest. Toss until the butter melts and the mixture is well coated; season with salt and pepper. Divide the potatoes, shrimp, snap peas and any juices from the baking sheet among plates. Sprinkle with the remaining 1 tablespoon chives.

THE BEST GARLIC SHRIMP IN THE WHOLE WIDE WORLD
Yes, almost the same as my other recipe but 100% better! A little change went a long way. It is the best, I promise! I have NEVER in my life had better shrimp. My whole family was in heaven. OK, enough tooting my own horn!

Steps:
- In a large Ziplock freezer bag, mix everything except the butter and swish it around good to coat all of the shrimp. Or, mix everything in a large bowl and cover TIGHTLY with Saran wrap.
- Refrigerate for 1 hour.
- Preheat large heavy bottom pan with the butter in it on medium. Toss shrimp around for about 10 minutes until pink and lightly browned.
- TIPS: Do not substitute with garlic powder OR dried parsley! Sea salt is stronger than table salt so use less than normal. Table salt can be substituted.
- Serve with steak or pasta with a white sauce.
- I KNOW THIS IS VERY SIMILAR TO MY OTHER SHRIMP RECIPE, BUT I MADE IT THIS WAY TONIGHT AND IT WAS SO UNBELIEVABLE THAT I HAD TO POST IT! EVEN BETTER THAN MY OTHER SHRIMP RECIPE!

THE BEST GARLIC SHRIMP EVER
Best in unshelled shrimp, though I'm sure shelled will work too. Use about 30 large or 50 medium, but make sure they are raw, not pre-cooked. Don't forget to serve with ciabatta, to soak up the sauce and gobble up!

Steps:
- In a 10" to 12" frypan, heat the cup of olive oil to medium low and add the shrimp and garlic.
- If the shrimp is raw, sauté for 3 minutes on each side.
- If the shrimp is already cooked, sauté for two minutes on each side (all you are doing is flavoring the shrimp with the oil and garlic).
- Remove from the pan and let cool.
- Place your baking stones in the oven and heat to 550ºF.
- On a floured surface, press the dough into a 9" circle (if you are doing home made).
- Place pizza dough on a surface that can slide on the stone or use a pizza peel covered with parchment paper.
- With a pastry brush, coat the dough with the garlic olive oil.
- For each pizza, add half the mozzarella, half the Fontina, and 1/2 the diced pepper.
- Now place 15 shrimp on each pizza and 1/2 the goat cheese in chunks.
- Add half the cherry tomatoes and sprinkle with 1/2 the Parmesan cheese.
- Dribble some of the remaining garlic oil over the pizza.
- When adding the topping, leave a 1" border on the edges so the dough can rise all around the edges.
- It is easy to stretch the dough out on the edges after the toppings are on.
- Pull out an oven rack and using a spatula, slide a pizza onto a stone.
- Rotate the pizza (s) 180º after about 3 minutes.
- Bake for 2 more minutes.
- At 550º, total baking time is 5 or 6 minutes, until the cheese is bubbling.
- Remove, slice, and serve.
HONEY-GARLIC SHRIMP
While it may sound like a plain, generic item you see on a menu at the food court at the mall, honey-garlic shrimp is actually one of the most exciting and delicious garlic shrimp recipes I know. It's the perfect balance of sweet and savory while still packing a substantial garlic punch, plus it's extremely fast and simple to make. This recipe uses half the honey that typical recipes use and allows the natural sweetness of the shrimp to shine through. Serve over hot cooked rice or the starchy base of your choice such as noodles.

Steps:
- Make sure shrimp are fully thawed and well drained. Keep in the refrigerator while you make the marinade.
- Whisk garlic, honey, ginger, soy sauce, and fish sauce together in a bowl.
- Add shrimp and toss thoroughly with a spatula for 2 minutes until completely coated. Cover with plastic wrap and marinate in the refrigerator for 30 to 60 minutes; toss occasionally while marinating.
- Brush a large nonstick skillet with oil and heat over high heat until you begin to see small wisps of smoke. Use tongs to immediately transfer shrimp into the hot skillet in a single layer. Set excess marinade aside.
- Sear shrimp for 2 minutes, then flip over. Dump in marinade and cook for 1 minute. Turn off heat and flip shrimp once more; let sit for about 1 minute. The marinade in the pan will reduce down to a beautiful glaze just from the residual heat in the pan. Garnish with green onion.
