THE BEST VINEGAR COLESLAW
We love the zippiness that a vinegar-based dressing brings to this coleslaw, making it the perfect partner for rich, meaty dishes like pulled pork or ribs. Cabbage can take lots of seasoning and lots of vinegar, so don't be bashful. But the real secret to this colorful coleslaw is the marinating time - a long trip to the fridge softens up the veggies and gives them time to absorb the flavors of the vinaigrette. A drizzle of olive oil at the end balances the acidity.

Steps:
- Whisk together the vinegar, salt, sugar, celery salt, pepper and garlic in a large bowl until combined. Reserve 1/4 cup of the dressing for serving. Toss the green cabbage, red cabbage and carrots in the remaining dressing until the vegetables are completely coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour and up to 3.
- Strain the coleslaw through a colander and discard the liquid. Transfer the coleslaw to a serving bowl. Drizzle with the reserved dressing and the oil. Season with salt and pepper if necessary. Toss to coat.
SIMPLE VINAIGRETTE
We followed the standard 3-to-1 oil-to-vinegar ratio for this super simple vinaigrette. For variety, add your favorite dried or chopped fresh herbs. Make a batch at the beginning of the week, and toss a few tablespoons with fresh greens for a quick weeknight salad. But remember that vinaigrette isn't just for salad: You can also use it as a quick sauce for fish or grilled chicken.

Slowly drizzle in the oil while whisking continuously until the mixture is combined and blended well. Use right away, or refrigerate in a sealed container for up to 3 days.

VINAIGRETTE DRESSING FOR A CROWD
This makes a huge amount of salad dressing for a few hundred people. For a church crowd or PTA spaghetti supper fund raiser. The leftover dressing keeps well if you use the dried parsley. But more attractive salad with the fresh because it stays brighter green. THIS CAN ALSO BE GIVEN IN JARS AS GIFTS. I am also listing a spaghetti recipe for a huge crowd too.

- Fresh Mint Vinaigrette. This 5-minute vinaigrette is both fresh and refreshing. It’s unbelievably minty, and there’s also a pleasant underlying sweet and tangy taste.
- Creamy Avocado Vinaigrette. This green vinaigrette is creamy, dreamy, and delicious. It’s bright, super zesty, and remarkably good for you as far as salad dressings go.
- Strawberry Lime Vinaigrette. This thick pink vinaigrette looks more like a smoothie than a salad dressing. Fortunately, it doesn’t need to look like a vinaigrette to taste like one.
- Maple Vinaigrette. This gorgeous golden vinaigrette perfectly balances sweetness and savoriness. The maple syrup provides a wonderfully rich base. The tarter components enhance the flavor rather than mask it.
- Clementine Vinaigrette. Clementine vinaigrette is sweet and citrusy with just a hint of tarragon underneath. Typically, tarragon isn’t my favorite herb.
- BEST Balsamic Vinaigrette. I tend to be skeptical when someone calls something the “best.” After all, taste is entirely subjective, so their best might not be my best.
- Sesame Ginger Dressing. Try this recipe if you’re looking for something with an absolute ton of flavor. It’s fresh and spicy with a distinctly Asian flair.
- Sunshine Salad Dressing. It’s hard not to like something with a name like “sunshine salad dressing.” This creamy, zingy dressing is just as light and bright as it sounds.
- Lemon Vinaigrette. Try this recipe if you like vinaigrettes that are more tart and zesty than sweet. Its bright yellow color perfectly matches its vibrant flavor.
- Creamy Greek Yogurt Balsamic Vinaigrette Salad Dressing. The prep time on this says 5 minutes. In reality, it only takes about half that time to whip up this creamy, flavorful dressing.
