WHOLE GRAIN WAFFLES

I love experimenting with recipes, and I came up with this one after a lot of experimenting with my favorite waffle recipe. These are more filling than your average waffles. I use aluminum-free baking powder. These are wonderful with homemade blueberry syrup.

FLUFFY WAFFLES

A friend shared this fluffy waffle recipe with me a few years ago. The cinnamon cream syrup is a nice change from maple syrup, and it keeps quite well in the fridge. Our two children also like it on toast. -Amy Gilles, Ellsworth, Wisconsin

HONEY WHEAT CORNBREAD (USING FRESHLY GROUND FLOUR)

This is our favorite cornbread recipe....concocted after much time fiddling around with "traditional" recipes trying to convert them into a healthier alternative using whole grain flour. My kids could make a meal of this by itself. If you're going to give it a try, serve warm (of course); slice pieces in half horizontally and spread with butter and additional honey, replace tops and enjoy! :) Posted for safe-keeping; made public at the request of a friend. *NOTE* If using store bought all-purpose or wheat flour, flour amounts will not be the same.

Steps:

  • Combine ground flax and water; set aside until water is absorbed (about 10 minutes).
  • Combine remaining ingredients; add flax.
  • Spread into baking dish. (I actually use a 11" round stoneware deep dish baker for this cornbread with an 11-cup capacity. I think a 9x9x2" square pan would be an equivalent substitution, or a 13x9" rectangular pan - but you may have to adjust the cooking time.).
  • Bake at 400° 15-20 minute or until golden brown and tests done.

BAKING WITH FRESH GROUND FLOUR - BALTIMORE FOODSHED
First, the bran in the flour is like little knives, breaking up gluten formation that allows bread to rise. Second, fresh ground flour is fluffier, so if you bake with volume rather than weight, your bread might have too little flour to bake up properly. And third, dough made from fresh ground flour might need a lighter hand when kneading it.

USING FRESH-GROUND WHOLE WHEAT FLOUR (AND SOME HIGHLIGHTS …
The big surprise was that this coarse, fresh-ground flour had almost exactly the same density (ounces per cup) as the commercial whole wheat in the top picture– it weighed in at 4 3/4 ounces per cup, while the Dakota Maid weighed 4 1/2 ounces per cup. So I was comfortable just swapping it in exactly for commercial whole wheat flour.

At room temperature: As little as 2 days, but some sources say up to 5 days would be okay. If your flour is already “soaking” in a recipe, don’t worry about rancidity. Other processes have already begun! In the refrigerator: 10 days. In the freezer: up to 30 days.
