SWEDISH WAFFLES WITH BERRY COMPOTE

These waffles are a weekend favorite with Gavin Kaysen's family-the recipe comes from his wife Linda's family in Sweden-and we're sure yours will love them, too. Topped with a fresh berry compote, they're a great way to start a day of lounging in your PJs.

Swedish Waffles with Berry Compote image

Steps:

  • Berry compote: In a small saucepan, combine berries, sugar, and lemon juice. Gently heat until sugar is dissolved. Crush about half of the berries with a wooden spoon; allow the rest to soften but maintain their shape, 10 minutes. Set aside.
  • Waffles: In a bowl, whisk together the flour, baking powder, and salt. Make a well in the ingredients and pour in the milk and vanilla; whisk thoroughly. Then whisk in warm (not hot) melted butter until fully incorporated. The batter should be thin.
  • Heat a waffle iron according to the manufacturer's directions. Brush waffle iron on both sides with some of the remaining melted butter. Ladle enough batter to evenly cover the lower plate. Close the lid and cook until the waffles are brown and crispy, about 3-4 minutes. Repeat in batches with remaining batter; make 6-7 waffles.
  • Assembly: Place waffles on a serving platter, spoon berries on top, and serve.

Pear Compote image

Steps:

  • Bring 1/2 cup dry white wine, 1/2 split vanilla bean, 1 star anise pod and a pinch each of salt and pepper to a simmer; cook until reduced by half, 4 minutes. Add 2 tablespoons sugar, 2 chopped peeled pears and 3 tablespoons water; simmer 8 more minutes. Add 1/4 teaspoon chopped thyme, increase the heat and simmer until syrupy, 1 to 4 minutes. Let cool.

CORNMEAL WAFFLES WITH APRICOT-CHERRY COMPOTE

This rendition of a breakfast favorite owes itssubstantial crunch to yellow cornmeal and its subtle tang to buttermilk. Cornmeal Waffles with Apricot-Cherry Compote image

Steps:

  • Whisk together creme fraiche and confectioners' sugar in a small bowl. Refrigerate until ready to use (up to overnight).
  • Whisk together flour, cornmeal, granulated sugar, baking powder, and salt in a large bowl. Whisk eggs, buttermilk, and vanilla in a small bowl. Add egg mixture to flour mixture; stir until combined. Add oil and butter; whisk until smooth.
  • Heat a waffle iron (preferably Belgian-style). Ladle 1/2 cup batter into each mold. Cook according to manufacturer's instructions until golden brown. Place waffles in a 200-degree oven to keep warm while you make the rest. Serve topped with compote and sweetened creme fraiche.

Apple, pear & cherry compote image

Steps:

  • Put the apples and pears in a pan with the sugar and 50ml water. Bring to a simmer, then gently cook, covered, for 15 mins or so until the Bramley apple has collapsed to a purée and the eating apple and pear are tender (stir to make sure it doesn't catch on the bottom).
  • Stir in the cherries or cranberries for 1 min, taste and add a little more sugar if necessary. Can be chilled for 3-5 days. Serve with vanilla ice cream, if you like. See 'Goes well with' for ideas for using up the compote.

  • Preheat your waffle iron. I find for crispy waffles, I have to turn mine to the max setting. Also preheat your oven to 250 degrees. Pour about 2/3 cup batter into your waffle iron and cook to desired doneness. Mine took about 4 minutes. Remove the waffle from the iron and place it directly on the oven rack to keep warm and crispy while you finish making the remaining waffles.
  • Place the cherries in a medium sauce pan along with the maple syrup and pinch salt. Cover and bring the mixture to a gentle boil over medium heat. Cook for 15 minutes, stirring often and gently smashing the cherries to release juices.
  • When the cherries are cooked through, remove about 2 Tablespoons of the juice and place it in a small bowl or measuring cup. Whisk in the cornstarch until a smooth paste forms. Add the cornstarch slurry back into the pot and cook an additional 2-3 minutes or until mixture is slightly thickened. Keep warm for serving.
