COLESLAW WALDORF SALAD

Potlucks tend to have a lot of heavy dishes, so this bright, fresh Waldorf salad coleslaw recipe is a welcome addition. I came up with this recipe as a way to serve something crunchy and fruity with a touch of sweetness. Sometimes I add shredded coconut and use toasted pecans instead of walnuts. -Trisha Kruse, Eagle, Idaho

This is my own spin on the traditional Waldorf salad. The ingredients crisp, filling, and bursting with juicy flavor. Perfect for hot summer days when you don't feel like firing up the stove.

THE ORIGINAL WALDORF SALAD

"Millions who never visited the Waldorf owe him a debt," The New York Times wrote in 1950, upon Oscar Tschirky's death. Mr. Tschirky, a Swiss immigrant who became known as "Oscar of the Waldorf," is credited with creating this piece of Americana in 1893, a timeless dish whose popularity has spread far past the Waldorf's exclusive doors and into home kitchens. Over time, variations would include blue cheese, raisins and chopped walnuts, which can be added here alongside the celery and apples. But the original is an exercise in simplicity: four ingredients that have lived on for over a century.

  • Angel's Cabbage Salad. It doesn't get much easier than this salad. Simply toss together bagged shredded cabbage with the tangy dressing, crunchy sunflower seeds, and sweet raisins.
  • Chinese Cabbage Salad. Although putting uncooked ramen noodles in a salad may sound odd, it adds an irresistibly crunchy texture to this Asian-inspired dish.
  • Italian Cabbage Salad. This recipe is the perfect example of how simple ingredients can have wow-worthy results. The key is using tarragon vinegar, which adds an herbaceous flavor to the entire dish.
  • Waldorf Cabbage Salad. With all the crunchy sweetness of a traditional Waldorf salad, this cabbage version is even better because it can last for a day or more before wilting, unlike lettuce.
  • Mayo Free Cabbage Salad. Tangy, salty, and sweet—this cabbage salad is a world of flavor. The dressing is a trio of red wine vinegar, soy sauce, and sugar to create a delectable dish, no mayo required.
