A great breakfast for guests - serve with roasted tomato halves. No need for toast as the breadcrumbs provide the crunch. Cook and serve in a Spanish cazuela.

Steps:
- Melt butter and oil in a frying pan over medium heat.
- Fry onion and pepper until slightly brown then pour into the cazeula.
- Carefully break all 6 eggs on top of the vegetable layer.
- Mix the breadcrumbs and cheese and sprinkle over the eggs.
- Bake in a moderate oven, 350 degrees F, gasmark 4 for about 10 minutes, until eggs have set, but are not hard.
- (Oven temps and cooking vessels vary so keep an eye on it).

SPANISH DEVILED EGGS
Steps:
- Mash 6 hard-boiled egg yolks, 1 tablespoon dijon mustard, 1/2 teaspoon diced jarred piquillo peppers plus 1 tablespoon liquid from the jar, 1/8 teaspoon hot smoked paprika, 1 tablespoon hot water, and salt and pepper. Lay 1 strip serrano ham in each egg white, then top with the yolk mixture. Sprinkle with more paprika.

SPANISH EGG CASSEROLE
This may sound alittle strange with the hard boiled eggs -- which aren't a particular favorite of mine. But it's a very tasty casserole. Great to take to a potluck dinner. FYI, the husband doesn't like green peppers so I replaced with 1/2 cup sliced olives.

Steps:
- Cook Noodles in lightly salted water until tender.
- Drain and spray with cold water.
- In large pan sauté onions and peppers in 3 Tblsp Butter - about 5 minutes.
- Add tomatoes and simmer 10 minutes.
- Add cheese, green peppers and sliced olives.
- In separate bowl, melt butter and blend in flour and salt.
- Stir butter/flour mixture in tomato mixture and cook until thick.
- Place half the cooked noodles in bottom of 2-qt.
- Casserole; slice 3 eggs and place on top of noodles; top with half the mixture.
- Repeat layers.
- Bake in pre-heated 350° oven for 25-30 minutes.
- Let cool 10 minutes before serving.

- Steam the potatoes for 15-20 mins or until cooked.
- Heat 1 tbsp oil in a non-stick pan. Add the onions and peppers, then cook for about 10 mins until soft. Push the peppers to the side of the pan and add the chorizo, sizzling until cooked though and releasing its oils. Transfer to a plate.
- Once cool enough, halve the potatoes. Heat 1 tbsp oil in another non-stick pan and tip in the spuds. Fry for about 10 mins until golden and beginning to crisp. Stir in the onion mix, heat through and season.
- Meanwhile, in the onion pan, fry the eggs to your liking. Place them on top of everything, allowing 1 egg per person.

- Spicy Tomato Sauce: Heat oil in a small saucepan. Add onion and garlic; cook over medium heat for 10 minutes. Stir in tomatoes and red pepper; cover and cook for 20 minutes more. Let cool slightly, then puree in a blender or food processor; transfer to a serving bowl.
- Tortilla: Heat oil in a 7- or 8-inch skillet. Add onions and cook over low heat for 10 minutes; add potatoes to skillet.
- Season eggs with garlic salt and pepper; stir in cheese and add to skillet. Let cook for a few minutes, then carefully lift edges and tilt skillet so uncooked egg can run underneath. When eggs are almost set, carefully slide onto a plate. Cover with skillet and invert eggs back into skillet. Cook for a few minutes more or until cooked through.
- Sprinkle with parsley and cut into wedges. Serve warm or at room temperature.
- This dish is also great when wedges are topped with small spoonfuls of Spicy Tomato Sauce.
SPANISH-STYLE POTATO AND ONION FRITTATA
Spain has one of my favorite omelets made from potatoes, cheese and onions called a "tortilla." Not to be confused with a Mexican tortilla, a Spanish tortilla is like the perfect mash-up of a baked potato and scrambled eggs. The Spanish serve it like an appetizer, but I love making it into an omelet. The key is to season every layer with salt and pepper at each stage. Small yellow potatoes are a bit more work to peel and dice, but they're sweeter than larger russet potatoes.

- Preheat the oven in broiler mode and place a rack 10 to 12 inches (25 to 30.5 centimeters) below the heating element.
- Beat the eggs in a bowl and add 1/2 teaspoon of salt, 1/4 teaspoon of pepper and 1/4 cup (25 grams) of the Parmesan cheese.
- Place the peeled and diced potatoes in a microwave-safe bowl, then toss with 2 tablespoons (30 milliliters) of the olive oil and season with 1/4 teaspoon salt. Cover tightly with plastic wrap and microwave on high for 6 to 9 minutes total, or until fork tender.
- Meanwhile, heat the remaining 2 tablespoons (30 milliliters) of olive oil and the butter over medium heat in a heavy 10-inch (25-centimeter) omelet pan. Add the onion and a generous pinch of salt. Cook, stirring, until tender but not browned, about 5 minutes. Add the potatoes to the pan and toss gently so that the potatoes don't break apart. Season the mixture with 1/2 teaspoon salt and 1/4 teaspoon pepper.
- Pour the reserved egg mixture into the pan over the potatoes and onions. Shake the pan gently while you lift the edges of the frittata; repeat until the eggs start to set, 2 to 3 minutes. Turn the stove to low and sprinkle the mozzarella and remaining 1/4 cup (25 grams) of Parmesan over the top of the frittata.
- Once the frittata is mostly set, place the pan under the broiler for a minute or two to lightly brown the cheese. Remove from the heat and let the tortilla rest for at least 5 minutes. Cut into wedges and serve with some sour cream, if desired.

- Finely slice the onions and chop the red pepper, removing the seeds. Cut the potatoes into roughly ½ cm slices.
- Heat a knob of butter in a medium (about 24cm) frying pan over a low heat and cook gently for 10 - 15 until starting to go brown, add the peppers and cook for a further 5 mins.
- Put the potatoes in a steamer over boiling water for 10 - 12 mins to soften. If you don't have a steamer, put in a saucepan, cover with boiling water and simmer gently for around 8 - 10 mins until just cooked through and drain well.
- Break the eggs into a jug and beat with a fork, season with a generous grind of pepper and a pinch of salt. Use scissors to snip the chives into small pieces and stir in.
- Heat the grill. Add a little more butter to the frying pan and add the potatoes. Pour over the egg mixture. Cook for 15 mins until almost set and golden brown underneath - you can use a fish slice to lift the omelette up and check. Put the frying pan under the grill. Make sure the handle is outside the oven as it will become very hot and can burn. Cook for a further minute or two and serve.

- Tortilla Española. The Spanish egg tortilla mustn’t be confused with the Mexican corn tortilla. A Spanish omelet is made with eggs, fried potatoes and caramelized onions.
- Huevos fritos. Fried eggs are often found as the main component of “plato combinado” – a one-course meal that is popular in cheap restaurants in the city as well as by the beach, and that usually includes some protein plus a couple of side dishes.
- Huevos estrellados o huevos rotos. Smashed or broken eggs are fried eggs that are broken and mixed up with potatoes and other optional toppings when served to the client.
- Huevos al plato. The Spanish style baked eggs are commonly served in humble family-owned restaurants and in the countryside, as a main course.
