MISO-MARINATED FLANK STEAK

I've seen similar recipes on several websites, and they're all quite similar. It makes a lovely presentation when served on a bed of fresh baby spinach or butter lettuce, and it's really delicious and quite easy to prepare. I hope you give it a try.

Miso-Marinated Flank Steak image

Steps:

  • 1. Whisk together the miso, mustard, ginger, salt, garlic and 2 tablespoons oil until a paste forms. Rub paste on both sides of the flank steak. Wrap well in plastic and let marinate in refrigerator for at least 30 minutes or up to 8 hours.
  • 2. Arrange rack in upper third of oven, and preheat oven to 450°F.
  • 3. Brush a baking sheet with oil. Remove steak from marinade, shaking off excess marinade. Place steak on prepared baking sheet.
  • 4. Roast in preheated oven for about 13 minutes (for medium), turning once. Turn on broiler, and cook steak under broiler, watching closely to prevent burning, for about 1 minute per side or until the surface turns a deep brown. Remove from oven and let rest 10 minutes. Season with sea salt and black pepper, as desired.
  • 5. Thinly slice against the grain, and serve immediately.

1/4 c white miso (fermented soybean paste)
2 tsp dijon mustard
1 tsp grated peeled ginger
1 tsp salt
1 clove garlic, crushed
2 Tbsp vegetable oil, plus more for brushing
1 1/2 lb beef flank steak
sea salt and black pepper, to taste

Steps:

  • Combine first 5 ingredients in a small bowl; stir well with a whisk.
  • Combine miso mixture and steak in a large zip-top plastic bag. Seal and marinate in refrigerator 2 hours.
  • Prepare grill or broiler. Remove steak from bag, reserving marinade. Place steak on grill rack or broiler pan coated with cooking spray.
  • Grill or broil 6 minutes on each side or until desired degree of doneness, basting occasionally with reserved marinade.

  • Preheat the oven to 450° and preheat a cast-iron grill pan. In a bowl, combine the wasabi and water. Stir in the horseradish and soy sauce. Rub the steak with 1 teaspoon of the oil and season with salt and pepper. Grill the steak over high heat until lightly charred, 5 minutes. Flip the steak and spread the wasabi over the charred side.
  • Transfer the pan to the oven and roast the steak for 10 minutes, until an instant-read thermometer inserted in the thickest part registers 135° for medium-rare; transfer to a cutting board and let rest for 10 minutes.
  • Meanwhile, in a saucepan of boiling water, cook the potatoes for 15 minutes. Drain and let cool, then peel. Wipe out the saucepan. Add the remaining oil and the potatoes and cook over moderate heat, stirring occasionally, until golden, 5 minutes. Combine the miso and mirin; add to the potatoes and cook, stirring, until glazed, about 2 minutes.
