CIDER WASSAIL

This traditional wassail recipe came from a dear friend in Fort Wayne, Indiana, where we lived for many years. Since it's warm, wonderful and non-alcoholic, we've even served it at church. This wassail drink is also perfect for a holiday open house. -Maryellen Hays, Wolcottville, Indiana

Steps:

  • In a large saucepan, combine all of the ingredients. Bring to a boil. Reduce heat; cover and simmer for 20-30 minutes. Discard cinnamon sticks. Serve hot in mugs.

Steps:

  • In a slow-cooker or a large pot over low heat, combine apple cider, orange juice and lemon juice. Season with cloves, ginger and nutmeg. Bring to a simmer. If using a slow cooker, allow to simmer all day. Serve hot.

Rittenhouse Inn Wassail Punch image

Steps:

  • To make the wassail, wrap the cloves, allspice, ginger, cinnamon sticks, and peppercorns in cheesecloth and tie with kitchen string. Combine the cider, cranberry juice, brown sugar, and spice bag in a large pot over high heat. Bring to a boil, then reduce heat and simmer 30 minutes.
  • For each serving, put one ounce of the bourbon into a mug and fill it with hot Wassail. Garnish with a dusting of nutmeg and a cinnamon stick.

Wassail:
12 whole cloves
6 whole allspice
1/2 inch fresh ginger root, peeled and sliced
3 cinnamon sticks
12 whole white peppercorns
1 gallon fresh apple cider
6 ounces cranberry juice
3/4 cup light brown sugar, packed
10-12 ounces bourbon

cheesecloth, kitchen string, large pot

Steps:

  • Place water in a very large pot and bring to a boil.
  • Steep tea bags in hot water for 4 minutes; remove tea bags.
  • Add cider, orange juice, cranberry juice, and sugar to a boil, stirring to dissolve sugar.
  • When it comes to a boil, reduce heat to a simmer.
  • Stick the cloves into the orange and drop into the pot along with the cinnamon, and red-hot candies.
  • Simmer the punch for 30 minutes, stirring occasionally.
  • Serve hot.

Steps:

  • Heat and stir until red hots are dissolved.

1 quart apple juice
1 cup pineapple juice
1 cup orange juice

Steps:

  • Mix all ingredients, except for the garnishes. (If you are iffy on the sugar, add it last, a little at a time and taste as you go along).
  • Heat the mix to boiling in a large saucepan, reduce the heat and allow it to simmer for 10 minutes.
  • Strain the wassail to remove the spices.
  • Serve very warm in a heat-proof punch bowl and garnish with the orange slices and cloves.
