Watercress Salad with Citrus Vinaigrette image

Steps:

  • Place watercress in a bowl of cold water to rinse well, then dry. Whisk together the orange juice, lemon juice, and olive oil to emulsify. Add sesame seeds to vinaigrette. Toss watercress in vinaigrette to coat.

1 bunch or 2 cups watercress
1 orange, juiced
1 lemon, juiced
1/4 cup olive oil
1 tablespoon sesame seeds

Watercress Salad with Mustard Vinaigrette image

Steps:

  • Whisk mustard, vinegar, and garlic in a medium bowl; season with salt and pepper, then gradually stream in oil, whisking constantly. Whisk until dressing is emulsified and thick.
  • Add watercress to dressing, season with more salt and pepper, and gently toss until watercress is evenly coated (you want to be careful not to bruise or wilt greens when tossing, so use a light hand). Pile salad lightly onto plates.

2 tablespoons Dijon mustard
1 tablespoon best-quality red wine vinegar
1/2 small garlic clove, finely grated
Kosher salt, freshly ground pepper
1/4 cup olive oil
2 small bunches watercress, tough stems trimmed (about 10 cups)

Watercress and Persimmon Salad with Champagne Vinaigrette image

Steps:

  • Whisk together vinegar, shallot, zest, 1/2 tsp salt, and 1/4 tsp pepper in a small bowl. Add oil in a slow stream, whisking until combined well.
  • Peel persimmons and cut into 1/3-inch-thick wedges. Toss watercress with persimmons and enough vinaigrette to coat, then season with salt and pepper.

  • Vinaigrette can be made 1 day ahead and chilled.

Artichokes, Asparagus, and Watercress Salad with Cumin Vinaigrette image

Steps:

  • To prepare the dressing: In a small bowl, combine the vinegar mustard, cumin, and sugar; season with salt and pepper. Whisk to blend. While whisking, slowly drizzle in the olive oil, mixing until the vinaigrette is emulsified. Set aside.
  • To prepare the salad: Fill a medium bowl with 2 cups of ice cubes and cover with cold water. Bring a pot of salted water to a boil over medium-high heat. Add the asparagus and blanch until tender but not mushy, about 3 minutes. Drain the asparagus in a colander and transfer to the ice water bath to stop the cooking. Drain again and place on a paper towel-lined plate to dry. Cut the asparagus stalks into thirds.
  • In a large mixing bowl, combine the blanched asparagus, parsley, artichokes, tomatoes, and watercress. Whisk the vinaigrette to combine and pour over the salad. Toss to coat and serve.

  • Combine garlic, watercress, fennel, lemon juice, salt, and pepper in the jar of a blender, and blend until smooth. With the motor, running, slowly add oil. Mix until oil is completely incorporated. Store in an airtight container for up to 3 days. Shake well before using.
