Steps:

  • In a bowl, whisk together juice, sugar and oil. Toss well with nuts and greens. Season and check.

Juice of 2 limes
1 teaspoon sugar
2 tablespoons canola oil
2 tablespoons chopped macadamia nuts, save a little for garnish
3 cups watercress
Salt and black pepper to taste

Watercress Stir-Fry image

Steps:

  • Heat a wok or cast-iron skillet over high. When wisps of smoke rise, swirl in vegetable oil. Add minced ginger and minced garlic and cook until sizzling, 15 seconds.
  • Add watercress; season with salt and pepper. Cook, stirring, until greens collapse, about 2 minutes. Remove from heat and toss with sesame oil. Serve watercress topped with toasted sesame seeds.

2 tablespoons vegetable oil
2 teaspoons minced fresh ginger
2 teaspoons minced garlic
2 bunches watercress, thick stems removed
Kosher salt and freshly ground pepper
2 teaspoons toasted sesame oil

Steps:

  • Spread mayonnaise on the top of each slice of bread.
  • Cut off and discard the tough stems from the watercress. Coarsely chop the remaining watercress leaves and stems.
  • Top 4 of the mayonnaise-smeared slices of bread with the chopped watercress. Sprinkle with salt and pepper and cover with remaining slices.
  • Cut away the crusts of each sandwich. Cut each sandwich diagonally in half to make triangles.
