Steps:
- Build each skewer by threading on a chunk of lettuce, a tomato, a cheese cube, lettuce chunk, cucumber chunk and finally, another lettuce chunk. Arrange the skewers on a platter.
- Whisk together the oil, vinegar, Italian seasoning and some salt and pepper in a small bowl. Right before serving, brush the dressing onto the skewers.

- Add all of the dressing ingredients to a medium bowl and stir well to combine. Refrigerate for at least 30 minutes, or can be made several days in advance.
- Cut the bacon into pieces and cook the bacon in a skillet until crisp. Remove to a plate lined with paper towels.
- Cut the iceberg lettuce in half. Cut each of the halves again in half or thirds (depending on how big the ice berg lettuce head is), to create "wedges". Place wedges on individual plates.
- To serve, spoon dressing over lettuce and then sprinkle the bacon crumbles, tomatoes, onion and blue cheese crumbles on top. Season with fresh crushed black pepper, to taste.

- Cut romaine lettuce heart in half lengthwise. Place romaine halves on a cutting board, flat-side down, and cut in half lengthwise again. Cut each long quarter into 4 (2-inch) pieces to create 16 “cubes.”
- Stir together mayonnaise, buttermilk, lemon juice, pepper, salt, and half of the blue cheese in a small bowl.
