WEIGHT WATCHERS CREAMY CHEESE CAPELLINI
I found this recipe in the March/April 2008 issue of Weight Watchers magazine. For those following the points plan, it is 6 points for 1 1/4 cup serving; it is also a CORE plan recipe.

Steps:
- Cook the capellini according to package directions, omitting the salt if desired.
- Drain, reserving 1/4 cup of the cooking liquid.
- While the water for the pasta is heating up, heat the oil in a large non-stick skillet over medium-high heat.
- Add the tomatoes and garlic.
- Cook, stirring frequently, until the tomatoes are softened, about 2 minutes.
- Add the spinach in batches, stirring just until each batch is wilted.
- Add the capellini, reserved cooking liquid, cheeses and salt.
- Cook, stirring frequently, until the cheeses are melted.
- Serve at once.

LEMON-PEPPER CAPELLINI
This is from Rachel Ray. This makes a great side dish to piccata and other breaded meat recipes. Also, throwing in some grilled chicken makes this a wonderful light meal!

Steps:
- Place water on to boil for pasta.
- In a large skillet combine olive oil and butter over medium heat. Add garlic, pepper and the lemon zest.
- Salt water when it boils then cook cappellini to al dente, 2 to 3 minutes. Add a ladle of cooking water to lemon pepper butter and stir in the lemon juice. Drain pasta and toss with lemon-pepper butter and salt, to taste. Add the basil to the pasta and serve a small bundle alongside your entree or serve as a delicate first course.
