Weight Watchers Core Mexican Rice image

Steps:

  • Heat oil. Add rice and cook until golden and toasted. Add and lightly saute onion, bell pepper, and garlic.
  • Put salt, 1/2 cup of tomatoes (undrained) and broth in a blender. Process till smooth.
  • Add liquid from blender to the rice mixture slowly. You can drain the rest of the tomatoes and add them to the rice at this point if you want extra tomato.
  • Bring to a boil, cover, turn heat to low, and simmer until rice is tender, about 1 hour. (Or however long brown rice needs to simmer - my package says 1 hour.)
  • Don't remove the lid during the cooking process.
  • If you don't have fresh garlic, you can add 1/2 teaspoon of garlic powder to the blender.

SOUTHWEST VEGETARIAN BAKE - WEIGHT WATCHERS FRIENDLY

Just finished this for supper after making it for the first time. It was warm and comforting with just the right amount of heat. Very filling - didn't even miss the meat! I made and baked in advance and then froze until I was ready to serve it. Yummy! Adapted from the Taste of Home Casseroles, Slow Cooker and Soups. 5.5 points per 1/8 of casserole.

Southwest Vegetarian Bake - Weight Watchers Friendly image

Steps:

  • In a large saucepan, bring rice and water to a boil. Reduce heat; cover and simmer for 35-40 minutes or until tender.
  • In a large bowl, combine the bean, corn, tomatoes, chilies, salsa, sour cream, 1 cup of the cheese, pepper and rice.
  • Transfer to a shallow baking dish coated with non-stick spray. Sprinkle with onions and cilantro.
  • Bake, uncovered at 350 degrees.
  • Remove from oven, sprinkle with remaining cup of cheese and continue baking for another 10 minutes.
  • Let stand 10 minutes before serving.
  • Note: I didn't have the patience to wait for the rice to cook so I increased the water by 1/2 cup and the rice cooked in the oven.

MEXICAN CASSEROLE - WEIGHT WATCHERS

This is a very different variation of "recipe #135814". This is a little easier and quicker and I wanted to see the nutritional info on it. This is a great WW recipe as it's high in fiber, low in fat and is very filling. This can be OAMC as it freezes and reheats well after cooking. I havn't tried freezing before cooking though. It could also easily be made vegetarian simply by subbing the hamburger for another type of bean or meat substitute. Edited to add that these are *very* large servings and I calculated them to be only 7.5 points each if calculated using only 4 servings.

  • Brown hamburger and onions in large skillet, until thoroughly cooked.
  • Add tomatoes, corn, back beans and crushed chilies, mix well.
  • Simmer for 10 minutes, stirring occasionally.
