WEIGHT WATCHERS WW BROCCOLI MUSHROOM QUICHE
Nice low point quiche that no one will know is a Weight Watcher recipe. No crust, it is not as eggy or custardy as traditional quiches, but very good.

Steps:
- Preheat oven - 350°F Spray a 9" pie plate with cooking spray.
- Melt margarine in a large non-stick skillet. Then add the broccoli, onions and mushrooms. Cook for about 5 minutes until sof, stirring constantly.
- Mix together flour and baking powder. Then mix in the egg stubstitute and milk; sitr together until not large lumps are present.
- Add cheese and the broccoli mixture and pour into the prepared pie plate.
- Bake about 35 minutes or until the top is golden and a knife inserted in the center comes out clean.

This is a recipe I came up with because I love broccoli and I like to stick to 3-4 pts for breakfast when I am on Weight Watchers. This quiche and 1 low fat english muffin keep me full until lunch.

Steps:
- Thaw, rinse and drain broccoli.
- Put 1/2 of broccoli in 11x7 glass pan sprayed with Pam.
- Put 1/2 onion, 1/2 pepper and all of cheese on top of that.
- Put remaining broccoli, onion and pepper on top of that.
- Blend egg beaters, milk, bisquick, salt, pepper and garlic in a blender until smooth.
- Pour mixture over broccoli in pan.
- Bake at 400 degrees for 50 minutes or until lightly browned.
- Cut into 6 pieces when cool.

- In a large pot of boiling, salted water, cook broccoli until bright green and crisp-tender, 1-2 minutes; drain and rinse well with cold water. Dry broccoli thoroughly with paper towels; toss broccoli in prepared dish along with cheese, onion and sausage.
- In a mixing bowl, whisk together remaining ingredients (except pecorino) until frothy; pour into pie dish (you may want to set dish on a rimmed baking sheet for ease of transport, but everything should fit with no problem). Bake until top is puffed and browned, 50-60 minutes; remove from oven. The quiche will sink as it cools - don't worry, this is normal. Sprinkle with pecorino; cool 20-30 minutes before slicing into 6 pieces.

- Cook the bacon according to package directions. Allow to drain on paper towels and then chop or crumble into smaller pieces.
