TRIPLE DIPPED FRIED CHICKEN

This is the crispiest, spiciest, homemade fried chicken I have ever tasted! It is equally good served hot or cold and has been a picnic favorite in my family for years.

Steps:

  • In one medium bowl, mix together 3 cups of flour, garlic salt, 1 tablespoon black pepper, paprika and poultry seasoning. In a separate bowl, stir together 1 1/3 cups flour, salt, 1/4 teaspoon pepper, egg yolks and beer. You may need to thin with additional beer if the batter is too thick.
  • Heat the oil in a deep-fryer to 350 degrees F (175 degrees C). Moisten each piece of chicken with a little water, then dip in the dry mix. Shake off excess and dip in the wet mix, then dip in the dry mix once more.
  • Carefully place the chicken pieces in the hot oil. Fry for 15 to 18 minutes, or until well browned. Smaller pieces will not take as long. Large pieces may take longer. Remove and drain on paper towels before serving.

WET AND DRY CHICKEN

Pat: In Memphis, barbecued meats are ordered either "dry" or "wet. "Dry" meats are coated with a dry spice rub before they're cooked, and often sprinkled with those seasonings when they come off the grill. "Wet" meats are slathered with barbecue sauce. Folks who crave a double dose of flavor, like me, order foods "wet and dry," meaning that the meat is sprinkled with dry rub before being cooked, then slathered with sauce afterward. This Memphis pit tradition has found its way into the repertoire of home cooks as well. The application of a dry rub works for meats cooked on the grill or, as our mothers are fond of doing, in the oven. In this recipe, we douse our chicken with a dry rub and then bake it in barbecue sauce. The result is moist, flavorful, falling-off-the-bone tender chicken. We serve this saucy chicken with steamed rice or hot buttered rolls to soak up all the tomatoey goodness, and the accompanying vegetables on the side. It's no wonder the Neely boys became so good with the grill when Momma was feeding us dishes like this from her kitchen oven.

Wet and Dry Chicken image

Steps:

  • Place the chicken in a 9 × 13-inch baking dish and sprinkle with Neely's Barbecue Seasoning and a generous amount of salt and pepper. Allow the chicken to marinate for at least 1 hour in the fridge, or, better yet, overnight.
  • Preheat the oven to 325°F.
  • Allow the chicken to come to room temperature. Heat the oil in a large skillet over medium-high heat. Add the onions, celery, carrot, and a pinch of salt and pepper, and cook, stirring, until the vegetables have softened, about 7 minutes. Stir in the Neely's Barbecue Sauce and the stock. Cool slightly, then pour the vegetable mixture over the chicken breasts, tossing the chicken to coat. Bake the chicken until cooked through and tender, about 30 minutes for breasts and 40 to 45 minutes for thighs. Serve immediately with hot steamed rice or buttered rolls, and steamed broccoli, if desired.

DRY-BRINED CHICKEN BREASTS

A short, simple dry brine can take a pallid chicken breast from bland to glam. Dark brown sugar is especially welcome since its molasses provides additional moisture. Dried bay leaves, ground to a powder, lend an aromatic woodsiness that will make you think, "Oh, that's what bay leaves taste like." But it's the salt here that's most crucial, as it draws out the meat's water. That water then dissolves the salt and, through diffusion, the two reenter the meat, seasoning the chicken thoroughly and encouraging water retention during cooking. You can enjoy it right out of the skillet with a spritz of lime juice or save it to serve in salads, sandwiches, fried rice and the like.

Dry-Brined Chicken Breasts image

Steps:

  • In a spice grinder, blitz the bay leaf pieces and peppercorns until finely ground. Transfer to a small bowl and add the salt, brown sugar and garlic powder, and rub it all together with your fingers.
  • Cut each chicken breast in half crosswise into two pieces of equal weight, creating one shorter, thicker piece and one longer, thinner piece. Place the four chicken pieces on a large plate or sheet pan and sprinkle generously on all sides with the spice mixture, moving the chicken around to catch any fallen spices. Refrigerate, uncovered, to dry-brine for at least 30 minutes and up to 1 hour (any shorter and the osmotic brining process won't complete; any longer and you'll end up with deli meat).
  • When ready to cook, take the chicken out of the fridge and heat a large skillet with a lid over high heat. Add enough oil to lightly coat the bottom of the skillet. Carefully add the chicken pieces, smooth sides down, and immediately reduce the heat to medium-low. Cook until the bottoms are browned but not burnt, 5 to 7 minutes. Flip the chicken, cover the pan and cook until the other sides are browned and the internal temperature at the thickest part of the meat reaches 155 degrees, another 5 to 7 minutes. You may want to pull the longer, thinner pieces off the heat a minute or two sooner, as they may cook faster.
  • Transfer the chicken to a cutting board to rest for at least 10 minutes so the juices can redistribute. The meat will continue to cook as it sits and should reach an internal temperature of 165 degrees. You can also check for doneness by cutting into the chicken; it should look white and juicy and no longer pink. Slice the chicken against the grain (that is, perpendicular to the parallel fibers that run within the breast) and serve with lime wedges if you'd like. You can also keep the meat whole and refrigerate it, covered, for up to 4 days.

Make sure your chicken breasts are roughly even thickness (helps with the grilling or baking), then put them in the water. Once you're ready to cook them, pat the chicken dry with paper towels.
  • For dry brining: Get a plate out and grind or sprinkle salt across it. Place the chicken breasts (or tenderloins or whatever) on the salt and press down, then sprinkle or grind more salt on the top side as well. Let rest for at least 15 minutes, though I've let it go more like 45 accidentally and it's fine. You can also let it rest uncovered in the fridge overnight as well, particularly if you're cooking skin-on chicken and want crispy skin.
  • From here, it depends on how you're planning to use the chicken. You can season, bake, grill, saute, whatever. If you're grilling, put them on a plate and coat them with some olive oil, then sprinkle or pat on whichever spices or rub you're using.
  • Grill on medium (350-450 F on my gas grill) for 3-4 minutes on each side, and then start checking with a digital thermometer. Chicken breasts need to be between 145 F and 165 F...I go more like 150F to be safe, but if you're really paranoid you can go higher. Let them sit for 5 minutes or so on a plate before cutting in, to let the juices settle and keep them moist.
