CRANBERRY AND WHITE CHOCOLATE SCONES
Washington State produces large numbers of cranberries. This delicious recipe featuring them is from the Inn at Barnum Point, Camano Island, Washington.

Steps:
- Preheat oven to 400 degrees F.
- In a bowl by hand or using an electric mixer, blend together the flour, sugar, baking powder, salt, and butter.
- Add the half and half, beaten egg, cranberries (I like the dried ones), and the white chocolate chips, and stir until the dough holds together.
- Turn out onto a lightly floured board and knead for 2 minutes.
- Form into a 1/2-inch thick round, then cut the round into 8 wedges (you can also make two smaller rounds of smaller wedges, if you like).
- Spray a baking sheet with vegetable oil, then transfer the wedges to the sheet.
- Bake the scones at 400 degrees F for 14 minutes or until golden brown.
WHITE CHOCOLATE SCONES
These are sweet scones and I just adore them with the raspberry jam and whipped cream. A decadent treat!

Steps:
- Lightly grease a baking pan and preheat oven to 400°.
- In a large bowl, combine the dry ingredients.
- Cut the butter into small pieces and incorporate into the flour mixture with a pastry cutter, or a fork, until evenly incorporated.
- In a separate bowl, beat the egg and buttermilk together and stir lightly into the flour mixture.
- Mix in the chips.
- Knead dough together, just until mixed.
- This is a fairly wet dough-do not add too much flour or handle too much or the scones will get tough.
- On a lightly floured surface, pat or roll the dough out to about 1-inch thick.
- Cut with a round 2-inch floured cookie cutter.
- Place on a baking sheet and bake about 15 minutes, or until scones are a light golden brown.
- Serve with jam and whipped cream.

DIPPED AND DECORATED WAFFLE CONES

- Melt the chocolate in a small deep bowl over a double boiler.
- Using a brush, paint the inside of a cone with some chocolate. While it is still wet, sprinkle a little of one or more of the sprinkles, pecans, chocolate candies or pretzels into the cone. Continue with the rest of the cones. Let dry.
- Dip the top 2 inches of each cone in the melted chocolate and coat with more of the decorations. Stand the cones in a glass to dry.
- To serve, fill the cones with some Triple Mint Choc Chip Ice Cream or your favorite ice cream and top with more of the decorations.
- Stir together the ice cream, chocolate chips, white chocolate chips, mint patty candies, creme de menthe candies and mint candies in a large bowl until combined. Transfer to a container, cover and freeze for 4 hours.
HOT CHOCOLATE CONES
I saw this recipe in a magazine at my doctor's office this afternoon and then when I was doing some shopping I saw them again advertised as hot chocolate for 2 using the optional ingredients listed. I thought they were very cute to give as gifts to co-workers, teachers, or to include in a gift basket with a special mug. You will need 2 (6 x 12) clear cone bags and 2 clear rubber bands to make the cones. I couldn't list with the ingredients list.

Steps:
- Pour the cocoa mix into a 6 x 12 clear cone bag and seal with a clear rubber band; trim 1 inch above band.
- Place the filled bag into a second cone bag, flattening the top.
- Layer either the chocolate chips or the M&M candies followed with the mini-marshamallows.
- Top all off with a red gumdrop and sercure the bag with the last rubber band.
- Attach a tag for instructions on making the hot chocolate. Divide the hot chocolate mix into thirds, place in a cup and fill with 3/4 cup boiling water.
- Top each cup with equal amounts of chocolate chips and marshamallows, enjoy.

HOMEMADE CHOCOLATE-COVERED ICE CREAM CONES RECIPE BY TASTY

- In a small bowl, combine ½ cup (85 G) chocolate chips and the heavy cream. Microwave in 30-second intervals, stirring in between, until melted and smooth, about 1 minute total. Cover with plastic wrap and refrigerate until set, about 20 minutes.
- In a large bowl, combine the remaining chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth, about 1 minute total.
- Wrap a 9x5-inch (22x12 cm) loaf pan in foil, keeping the foil taut across the top. Set nearby.
- Spoon about 2 tablespoons of the melted chocolate-coconut oil mixture into a cone, flip upside-down, and spin to coat the inside, letting excess chocolate drip back into the bowl. Poke the cone through the foil to prop upright, and repeat with the remaining cones. Chill in fridge until set, about 2 minutes.
- Once set, spoon some of the softened ice cream into the cones to fill, and smooth the tops. Place the cones in the freezer for 10 minutes, or until set.
- Scoop about a teaspoon of the ganache onto a spoon. Fill an ice cream scooper with the ice cream and create a hole in the middle with the end of a spoon. Place the ganache in the hole and place on top of a cone. Repeat with remaining cones.
- Set the cones on a baking sheet and freeze again for 30 minutes, or until solid.
- Using the remaining melted chocolate, dip the cones, turning to coat the ice cream.
- While the chocolate is still wet, quickly dip the cones in the chopped peanuts to coat.

RASPBERRY & WHITE CHOCOLATE SCONES

- Heat the oven to 220C/200C fan/gas 7. Mix the flour, salt, baking powder and sugar in a bowl, then rub the butter into the dry ingredients using your fingertips, until it looks like fine breadcrumbs. You can also gradually pulse it in a food processor until it resembles breadcrumbs. Gently fold in 75g of the white chocolate.
- Gradually stir the milk into the flour mixture, and use your hands to bring it together until you have a smooth dough. You may need to add an extra 15-20ml milk until you have a soft dough. Gently stir in the raspberries. Working quickly so the raspberries don't completely melt, lightly dust a baking sheet lined with non-stick baking parchment and the top of the dough with flour. Gently roll out the dough to a 2cm-thick circle (ours was 22cm). Cut into 8-10 triangles, like a pizza, spreading them all out so they're about 5cm apart but still in a circle.
- Bake for 18-20 mins until golden brown. Set aside to cool. Melt the remaining white chocolate either in a bowl over a pan of gently simmering water, or in 20-second bursts in the microwave. Drizzle the melted chocolate over the scones before serving.
