WHITE CHOCOLATE SUGAR COOKIES

Steps:
- Put the chocolate in a small microwave-safe bowl and microwave in 30-second intervals, stirring, until melted, about 2 minutes. Let cool slightly. Whisk the flour, baking powder and salt in a medium bowl.
- Beat the butter and sugar in a large bowl with a mixer on medium-high speed until light and fluffy, 3 to 5 minutes. Beat in the egg until smooth. Beat in the melted white chocolate, then the vanilla. Reduce the mixer speed to low and beat in the flour mixture in three additions until just combined. Divide the dough between 2 sheets of plastic wrap and pat into disks; wrap and refrigerate until firm, at least 2 hours or overnight.
- Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Roll out the dough on a floured surface until 1/4 inch thick. Cut out cookies using a 3- to 3 1/2-inch cookie cutter. Arrange 1 1/2 inches apart on the prepared pans. Freeze until firm, about 10 minutes. Gather the scraps and refrigerate until firm, then reroll once, cut out more cookies and freeze.
- Bake, switching the pans halfway through, until the cookies are firm and the edges are light brown, 12 to 15 minutes. Let cool 5 minutes on the pans, then transfer to racks to cool completely.
- Decorate the cookies with royal icing. Sprinkle with nonpareils. Let set, about 1 hour.
WHITE CHOCOLATE ICICLE COOKIES
I have not made these into the icicle shapes but I have made this recipe into less time consuming shapes and still used the glaze and glitter (you can order the glitter online from King Arthur Flour). Very yummy and pretty no matter what shape you choose. I put 24 cookies but that depends on how big you make them and I can't say how long it will take to make the icicles as I've not done that, so don't go by that it says below. I just had to put something in. Prep time includes 4 hrs of chill time.

- Mix sugar, butter, milk, vanilla, egg and melted chips in a large bowl with a spoon till creamy. Stir in flour, baking powder and salt. Cover and refrigerate at least 4 hours until chilled.
- Heat oven to 375°F For each cookie, divide 1 round teaspoons of dough in half. Roll each half into a 5" rope, tapering the ends. Twist the ropes together. Place 2" apart on ungreased cookie sheet.
- To hang icicles, poke a hole in the top of each cookie with a toothpick. Bake 5-7 minutes or until set and very light brown. Cool 2 minutes. Remove from cookie sheet to a wire rack. Cool completely.
- Brush with White Glaze (mix all glaze ingredients until smooth or of desired brushing consistency. Add more milk, a few drops at a time if necessary) and sprinkle with glitter or sugar. Thread string through the hole in each cookie to hang if desired.

- Preheat the oven to 350 degrees F.
- Using a mixer, cream the butter and sugar until fluffy, scraping the sides once. Add the eggs, one at a time, mixing after each addition. Mix in the vanilla.
- Sift together the flour, cocoa, baking soda and salt, and then add in batches to the mixer, mixing until just combined after each addition. Gently blend in the white chocolate and chocolate chips.
- Using a cookie scoop, add 1 tablespoon portions to a baking sheet. Bake until the cookies are done but still soft and chewy, about 8 minutes.
- Let cool on a baking rack. Yummy!

- Preheat oven to 190C/fan 170C and grease two large baking sheets.
- Cream the butter and sugars together until pale and fluffy. Beat in the flour and then stir in the white chocolate chunks.
- Place heaped spoonfuls, around 10 for large cookies, onto the baking sheets well spread apart, and press down gently (do not completely flatten). Bake for 10-15 minutes or until spread out and a pale golden brown. Leave to cool slightly and then transfer them onto a rack and allow to cool completely (if you can wait!) before eating.

- Cream together margarine and eggs until smooth. (Add the eggs 1 at a time.).
- Add the granulated sugar followed by the brown sugar.
- Add the flour 1 cup at a time.
- Add vanilla, salt and baking soda.
- Add the white chocolate chips 1 cup at a time.
- Bake in the oven for 12-13 minutes.
- They will be very soft when removed from the oven, but immediately use a metal spatula to remove them from the cookie sheets to let the cookies cool.
