Steps:
- Preheat waffle iron according to manufacturer's instructions. In a large bowl, whisk flour, sugar, baking powder, and salt; set aside.
- In a small bowl, whisk milk and eggs; pour over flour mixture, and whisk gently to combine (don't overmix). Gently whisk in butter.
- Following manufacturer's instructions, cook waffles until deep brown and crisp. (For a standard waffle iron, pour a generous 1/2 cup of batter into center, spreading to within 1/2 inch of edges, and close; waffle will cook in 2 to 3 minutes.) Serve warm, with maple syrup and butter, as desired.
WHITE LILY WAFFLES
I love this recipe because the waffles are so light! My mom has used this recipe for years. She also uses the White Lily biscuit recipe. It's very hard to find White Lily. Sometimes we have it shipped to us. We have found it in TN. and if you are in northeast US, you can find it at most Meijer stores. If you find it, please let me know. Steps:
- Preheat lightly greased waffle iron.
- Stir flour and soda in medium plastic bowl.
- Beat eggs whites until stiff.
- Combine egg yolks, butter or margarine and milk and stir into flour mixture.
- Fold in egg whites (using plastic spatula).
- Let sit for a few minutes to rise (until fluffy).
- Pour about 1/2 cup of batter in center of waffle iron.
- Bake waffles until no steam shows around the edges.
- Lift top and gently loosen waffle with a fork.
- Remove waffle and serve at once.
- MAKES: five 7 1/2 in waffles.
- You can add blueberries, strawberries, etc to this recipe and it's very tasty!
- NOTE: Leftover waffles may be refrigerated or frozen.
- Stack with waxed paper between layers and wrap tightly with freezer wrap.
- Waffles reheat quickly in toaster or microwave oven.

EASY MORNING WAFFLES

- In a large bowl, combine the flour, brown sugar, baking powder, salt and cinnamon. In a small bowl, whisk the egg yolks, milk, oil and vanilla; stir into dry ingredients just until moistened. In a small bowl, beat egg whites until stiff peaks form; fold into batter., Bake in a preheated waffle maker according to manufacturer's directions until golden brown., In a microwave, melt the butter, honey and cinnamon; stir until smooth. Serve waffles with syrup. Freeze option: Arrange waffles in a single layer on sheet pans. Freeze overnight or until frozen. Transfer to a freezer container. Pour remaining syrup into a freezer container. Freeze up to 2 months. To use, reheat waffles in a toaster. Microwave syrup until heated through, and serve with waffles.

- Combine water and flaxseed meal in a medium-sized bowl. Set aside for 5 minutes.
- Combine flour, baking powder, sugar, and salt in a large mixing bowl. Mix well.

It's time to put that waffle iron languishing in the back of your cabinet to good use. These airy, delicate and crisp-edged waffles are so fabulous, yet so simple to throw together, they're destined to become part of your weekend breakfast routine. Freeze leftovers, if you have any, in Ziplock bags and serve them during the week. You can pop them in the toaster to reheat (use a light setting) and they come out nearly as well as freshly made, maybe even slightly crunchier. For a lighter, fluffier waffle, separate the eggs and proceed with step 2 using the egg yolks. Beat the whites until stiff, then fold into the batter. For whole-grain waffles, use 1 1/3 cup all-purpose flour and 2/3 cup whole-wheat flour. You can also substitute brown sugar for the granulated.
