Steps:
- In a large bowl, mix warm water, yeast, and 1/3 cup honey. Add 5 cups white bread flour, and stir to combine. Let set for 30 minutes, or until big and bubbly.
- Mix in 3 tablespoons melted butter, 1/3 cup honey, and salt. Stir in 2 cups whole wheat flour. Flour a flat surface and knead with whole wheat flour until not real sticky - just pulling away from the counter, but still sticky to touch. This may take an additional 2 to 4 cups of whole wheat flour. Place in a greased bowl, turning once to coat the surface of the dough. Cover with a dishtowel. Let rise in a warm place until doubled.
- Punch down, and divide into 3 loaves. Place in greased 9 x 5 inch loaf pans, and allow to rise until dough has topped the pans by one inch.
- Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes; do not overbake. Lightly brush the tops of loaves with 2 tablespoons melted butter or margarine when done to prevent crust from getting hard. Cool completely.

RUSTIC WHOLE WHEAT BREAD

- Stir all-purpose flour, whole wheat flour, brown sugar, instant yeast, and salt together in the bowl of an electric mixer fitted with a dough hook attachment. Whisk water and oil together in a cup; pour into flour mixture. Mix on low speed until dough pulls away from the sides of the bowl into a ball.
- Turn dough out onto a lightly floured surface; knead just until dough is smooth, about 1 minute. Divide and shape dough into 3 balls for small loaves or 2 balls for larger loaves. Dust loaves with flour and place onto a baking sheet; cover with a towel, and let rise until doubled in size, about 25 minutes.
- Preheat oven to 375 degrees F (190 degrees C). Slash an "X" about 1/4-inch deep in tops of loaves with a sharp knife.
- Bake in the preheated oven until loaves are golden brown and sound hollow when tapped, about 25 minutes. Remove from oven to cool completely on a wire rack.

WHOLE-WHEAT CHOCOLATE CHIP LOAF CAKE
Nutty whole-wheat flour and semisweet chocolate are a winning pair in this easy-to-make one-bowl loaf cake. Whole-wheat flour gives this cake depth and a nubbly texture that is tastier than that of your average all-purpose flour, and semisweet chocolate makes it a special treat. You can use whatever type of chocolate chips you prefer, and chopped chocolate works, too, if that's what you have on hand. You can also use a greater proportion of whole-wheat flour if you like - up to about 1 cup/128 grams of the total 1½ cups flour works well - but the cake will be a bit more dense. It will still be delicious, but it will have a slightly different texture.

- Heat oven to 350 degrees and butter a light-colored metal 9-by-5-by-3-inch loaf pan. Line the pan with a strip of parchment paper that hangs over the two long sides.
- In a large bowl, vigorously whisk eggs and brown sugar until light and smooth, about 30 seconds.
- Add the sour cream, melted butter, oil, vanilla extract and salt, and whisk until smooth. Whisk in the baking powder and baking soda.
- Add both flours and all but one 1 heaping tablespoon of the chocolate chips. Stir with a rubber spatula until combined and no streaks of flour remain.
- Spoon the batter into the prepared pan, smooth the top, and sprinkle with the reserved chocolate chips, 1 teaspoon of granulated or turbinado sugar and a sprinkle of salt. Bake until golden and puffed, and a tester inserted into the center comes out clean or with a bit of melted chocolate, 50 to 60 minutes.
- Carefully run a thin knife or offset spatula around the edges of the pan not protected by the parchment paper. Set the pan on a rack to cool for about 15 minutes. Then, use the parchment paper to lift the cake out of the pan and set it back on the rack to cool completely. Keep leftovers loosely covered at room temperature for up to 3 days.

My mother introduced this loaf to my family 20 years ago. It was a favorite bread during the holidays and became a favorite at our Bed and Breakfast as the bread in our Creamcheese and Banana Slice French Toast Sandwiches.

- Combine 2 cups of all-purpose flour (spooning lightly to measure) the sugar, salt, cinnamon, nutmeg and yeast in a large bowl.
- Heat milk, water and oil in a medium size sauce pan until very warm (120 to 130-degrees).
- Pour into dry ingredients.
- Beat mixture with electric mixer on medium speed 4 minutes or until well blended.
- Add whole wheat flour, oats and raisins; beat with a wooden spoon until blended.
- Beat in enough of the remaining white flour to make a soft dough.
- Turn dough out onto a light floured surface.
- Kneed until smooth and elastic, about 5 minutes, using only enough of the remaining white flour to keep the dough from sticking.
- Place dough into a large buttered bowl; turn to bring buttered side up and cover with a cloth.
- Let rise in a warm place, away from drafts, until double in volume, about one hour.
- Grease two loaf pans.
- Punch down dough; divide in half; shape into loaves.
- Place loaves in pans; brush tops with melted butter.
- Cover and let rise in a warm place until double, about 30 minutes.
- Bake at 375-degrees for 40 minutes and loaves sound hallow when tapped with fingers.
- Remove from pans to wire rack and brush with butter.
- Let cool.

- Scale the yeast, sugar, and flour. Here are the steps: Scale the water required into the mixing bowl. Add the active dry yeast into the water. Add the brown sugar.
- Autolyse for two hours. Autolyse refers to the resting process after combining the flour with water. So what you need is to mix the water and flour gently (no kneading) and let it rest for two hours.
- Kneading (with a food processor!) The kneading process we use is different from many other recipes. Knead the dough will help to form gluten, but excessive kneading of whole wheat flour dough is counter-effective as the bran inside the flour can cut through and destroy the gluten.
- Bulk fermentation (first rise) Remove the dough from the food processor and keep it in a large bowl and cover with damp cloth or cling wrap. Let it ferment at room temperature until it doubles its size.
- Pre-shape the whole wheat flour loaf. Press the dough gently to remove the gas. Do it gently as not to damage the gluten strands. Remove the dough onto a floured working table.
- Final shaping and proofing (second rise) Press to remove the gas in the dough. Roll out the dough and then shape into loaves or buns. Cover the dough with a damp cloth.
- Baking. Preheat the oven until it reaches 175°C/350°F. Brush the loaf with egg wash or water before baking. Bake the bread for thirty-five minutes or until the top turns golden brown.
