Soft-N-Fluffy Hamburger Buns image

Steps:

  • Place the water, canola oil, flour, sugar, salt, vital wheat gluten, and yeast into the pan of a bread machine in the order recommended by the manufacturer, select the Dough cycle, and turn on the machine. Line baking sheets with parchment paper.
  • When the cycle is finished, remove the dough to a lightly oiled work surface, and knead for 2 to 3 minutes. Cut the dough into 12 equal-size pieces, and roll the dough into balls by cupping your hand, with open fingers, over each piece of dough. Roll gently, with just a little pressure, to form a dough ball with a silky surface. Place the dough balls onto the parchment-lined baking sheets, and flatten each dough ball gently into a bun. Cover with a cloth and let rise until doubled, 30 to 45 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake the rolls in the preheated oven until the tops are golden brown, about 12 minutes. Let cool on racks before slicing.

I found a recipe on the internet and substituted and added different ingredients to make a white hamburger bun recipe 100% whole wheat and healthy. I have been making them for years and my family and friends just love these buns! Never will I buy buns again! As with any bread machine recipe, add flour and/or water as needed. You can add other ingredients such as dried onion flakes, ground flax seed or whatever. Sometimes after cooling I wrap and freeze them and defrost as needed. I hope you will love this recipe as much as I do! Also, this recipe also makes great dinner rolls. Just divide dough into 12 to 24 balls, depending on the size of roll you want.

Steps:

  • Place all ingredients in order according to your bread machine.
  • Select 'dough' cycle.
  • Allow cycle to run.
  • Dump out onto lightly floured surface. Divide into 8-10 pieces(I make 8 hamburger,10 hot dog).

Whole Wheat Sandwich Buns for Burgers, Hot Dogs and More image

Steps:

  • Place the first 3 ingredients into an electric mixer and mix well (using the standard paddle).
  • In a small bowl, dissolve honey into warm milk.
  • Sprinkle the yeast over the top of the milk and allow to soften slightly before blending it in all the way.
  • After the yeast becomes active and bubbly, add to the dry ingredients along with the cool melted butter.
  • Using the the dough hook on your electric mixer, knead on the second speed level.
  • After about 5 minutes of kneading, check to see if the dough consistency is correct (having come together into a smooth ball) add water if too dry, or flour if too wet, a little bit at a time until the correct consistency is reached.
  • Continue kneading with mixer about 5 more minutes or until the dough appears smooth and strands of dough can be seen forming in it.
  • Turn the dough out into a greased mixing bowl in a warm, draft-free area and allow to rest, covered with a towel, for 10-15 minutes.
  • Sprinkle a flat baking sheet with coarse cornmeal.
  • Divide dough into 8-10 pieces and roll out and form into desired shapes, tucking the seam beneath it and place the pieces onto the baking sheet.
  • Place your baking sheet on the middle baking rack along with a small pan of boiling water and close the door.
  • Allow the buns to rise for 20-25 minutes then empty the pan with the water and add more boiling water to it and put it back in the oven.
  • Allow the buns to rise for another 20-25 minutes (about 45 minutes total).
  • Take the dough out and set in a draft free area and raise your oven temperature ot 350°F While oven is heating brush buns with beaten egg and sprinkle tops with your choice of seed (optional).
  • When the oven is heated, bake the buns for about 20 minutes or until golden brown.

  • Place 1-3/4 cups flour, sugar, yeast and salt in a large bowl. Heat the milk, water and shortening to 120°-130°. Pour over flour mixture; add the eggs. Whole Wheat Hamburger and Hot Dog Buns (Bread Machine) image

Steps:

  • Place all ingredients in bread pan, select Dough setting, and press Start. (Vital Wheat Gluten is optional but the bread will rise higher with it.).
  • When dough has risen enough, the machine will beep. Remove bread pan, and turn out dough onto a floured countertop. Gently roll and shape the dough into a 12-inch rope.
  • With a sharp knife, divide dough into 8 pieces for hamburger buns or 12 pieces for hot dog buns.
  • Grease a baking sheet. Roll pieces of dough into balls and flatten for hamburger buns or shape into 6-inch rolls for hot dog buns. Place on prepared baking sheet. Cover and let rise in warm oven 10 to 15 minutes until almost doubled.

I've tried to make a low calorie homemade bread for years. When they came out with thin buns, it inspired this recipe. One sandwich bun is 1 Weight Watcher point. TIPS: You'll need a 4" biscuit or cookie cutter for these to be consistent. The vital wheat gluten improves the texture and rise, but you don't have to use it. Just add 2 more tablespoons of flour if you omit it. And white flour will work just fine if you don't want whole wheat. Just add more flour in place of the extra bran called for in the recipe. Thin Sandwich Buns image

Steps:

  • In a bowl sprinkle the sugar over the warm water, then do the same with the yeast. Add the egg and oil and combine. In a separate container, use a fork or a whisk to stir together the flour, bran, wheat gluten, and salt. Add 1/2 of this mixture to the wet ingredients and blend. This is the sponge.
  • Let rise 30 - 45 minutes.
  • Add rest of flour mixture and knead for about 5 minutes. I use my stand mixer with the dough attachment. This dough will be sticky.
  • Spray 2 cookie sheets with cooking spray. Divide dough into 16 equal portions. This is a wet dough so instead of adding any additional flour, I weigh the dough on a food scale and divide it by 16. Then I weigh out each portion and put 8 on each cookie sheet. Don't worry about how it looks now.
  • Take a 4" biscuit cutter and place it over one of the dough portions. If you wet the inside of the cutter as well as your fingers you can spread the dough into a perfect circle by using your fingers to flatten it to the inside edge of the biscuit cutter. (These will be very thin but they will rise). Remove the cutter, re-wet the inside and use it to do the same thing to the remaining 15 buns.
  • Preheat oven to 350 degrees. Let the buns rise until double in bulk, about 30-45 minutes.
  • Bake in a preheated 350 degree oven 12-15 minutes until golden brown. Don't overbake. Cool the buns and then cut them in half for sandwich buns.
  • Edit Note: Since I first started making these I've made 2 changes. One is that I make them in muffin top pans sprayed with Pam. No cutting involved.
  • The other thing is that I use oat fiber instead of the wheat bran. I ordered oat fiber online. It is NOT the same as oat bran and is in many things these days, so I decided to try it instead of wheat bran. It is very high fiber, few calories, and pleasant tasting. Just use in moderation. In this recipe I use only 1/4 cup. It is 5 calories and 26 grams of fiber for the 1/4 cup. Also, it is more mild tasting than the wheat bran.
  • Each bun has 108 Calories; 1g Fat; 5g Protein; 20g Carbohydrate; 4g Dietary Fiber; 13mg Cholesterol; 124mg Sodium.

  • In a small saucepan, combine the milk, water, butter, sugar, and salt in a saucepan. Bring to a simmer, then remove from the heat, and let it stand until it’s lukewarm (too hot and it will kill the yeast). If you have an instant read thermometer, you want to use it when it’s 110 degrees F.
  • In a large bowl, whisk the flour and yeast together to combine. Pour the lukewarm wet ingredients from the saucepan into the flour, and stir until the dough starts to come together. If you have a stand mixer, use the dough hook to knead for 8 minutes. If not, knead the dough on a floured surface for 10 minutes (and resist adding too much flour. Adding more flour will make the bun more dense, and heavy). Place the dough in a large oil greased bowl, and toss the dough to coat. Cover with plastic wrap and let stand until it doubles in size (about 1 hour).
  • Redistribute the yeast in the dough with your hands (try not to degas the dough too much) and divide into 12 portions. Make tight balls by pulling the dough out and around and pinching it on the bottom. Place them on two sheet pans lined with parchment paper, and flatten each ball with the palm of your hand until it’s about 3 or 4 inches wide (wet your hands first). Let the rolls rise until they have doubled in size, around 30 to 45 minutes. Make sure you give them the time to rise, or else they will be very dense.
  • Preheat the oven to 400 degrees F. Beat the egg in a small bowl, and brush the tops of the rolls so they get an extra beautiful color on them in the oven. Sprinkle the tops with wheat germ. Bake for 16-18 minutes until they have browned on the top and bottom (they should be 200 degrees on an instant read thermometer). YAY homemade hamburger buns!!!
