RICH FRUIT KUCHENS

Steps:
- In a large bowl, dissolve yeast in warm water. Add the milk, sugar, salt, oil, egg and 2-1/2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. Place in a greased bowl, turning once to grease top. Do not knead. Cover and refrigerate overnight., The next day, for custard, whisk the eggs, cream and sugar in a large bowl until combined; set aside. Divide dough into 4 portions. , On a lightly floured surface, roll each portion into a 10-in. circle. Press each circle onto the bottom and up the sides of an ungreased 9-in. pie plate. Arrange 2 to 2-1/2 cups of fruit in each crust. Pour 1 cup custard over fruit., For topping, combine the sugar, flour and cinnamon in a small bowl. Cut in butter until mixture resembles coarse crumbs. Sprinkle 1/3 cup over each coffee cake. Cover edges of dough with foil. Bake at 350° for 35-40 minutes or until golden brown and custard reaches 160°.

EASY FRUIT KUCHEN
I like this recipe because you can change it up so easily. Just add any fruit that you like. Canned or fresh, its perfect either way.

- 1. HEAT oven to 375. Coat 13x9 metal baking pan with non stick cooking spray.
- 2. COMBINE flour and 1/2 cp of sugar in large bowl. Cut in butter with pastry blender or two butter knives until mixture resembles coarse crumbs. Beat milk and egg with fork just until blended. Stir into flour mixture with fork just until moistened. Spread evenly in prepared pan. Overlap slices of fruit. Drizzle with melted butter.
- 3. BAKE 28-35 minutes or until golden brown. Serve warm or at room temperature...Also good served with Ice cream.

- In a bowl, combine flour, salt and sugar; cut in butter until mixture resembles cornmeal. Mix egg and milk; add to flour mixture., Press into a greased 13x9-in. baking dish. Arrange fruit on crust. Combine remaining filling ingredients; pour over fruit. For topping, combine ingredients until crumbly; sprinkle over filling. Bake at 350° for 50-60 minutes or until fruit is tender.

YAYA'S FRUIT KUCHEN
Since Yaya drinks coffee all day long and always offers it to her guests, this kuchen has become a favored coffee cake for our family. She usually makes the apple or peach versions. She often adds just a few slices of banana for garnish - which I always avoided as a child. If you like a crumbly topping: just set aside 1 cup of the prepared batter and work more flour into it with your fingers until it has a crumbly consistency. Then sprinkle this mixture on top of the fruit slices before you bake. Enjoy!

- Sift the baking powder into the flour and set aside.
- Cream the margarine and sugar. Add the egg yolks and whole egg. Beat for 2 minutes.
- Slowly mix in the flour mixture until smooth.
- Pour into a greased cake pan. Spread the jam over the surface of the batter and arrange fruit slices on top.
- Bake at 350 for 35-45 minutes or until top is golden and inserted toothpick comes out dry.

Steps:
- Stir together yeast and warm water in mixer bowl and let stand until foamy, about 5 minutes. (If mixture doesn't foam, start over with new yeast.)
- Add 2 cups flour, 2/3 cup sugar, salt, yogurt, egg, zest, and vanilla to yeast mixture and mix at medium-low speed 1 minute. Beat in 1 stick butter, 1 Tbsp at a time, until incorporated. Beat at medium speed until dough is smooth and shiny, about 5 minutes. (Dough will be very sticky.) Scrape down side of bowl and sprinkle dough with remaining 2 tablespoons flour. Cover bowl with a kitchen towel (not terry cloth) and let dough rise in a draft-free place at warm room temperature until doubled, 1 1/2 to 2 hours.
- Spread remaining 2 tablespoons butter in bottom of a 9-inch square baking pan and sprinkle with remaining 1/3 cup sugar. Cut each plum half into 5 or 6 slices and arrange in 1 layer pan.
- Stir dough until flour is incorporated, then spread evenly over plums. Loosely cover with buttered plastic wrap, then kitchen towel. Let rise in a draft-free place at warm room temperature until almost doubled, about 1 1/2 hours.
- Preheat oven to 375°F with rack in middle.
- Bake until kuchen is golden-brown and a wooden pick inserted into center comes out clean, 30 to 35 minutes. Cool in pan 5 minutes, then invert and unmold onto a rack to cool completely.
