Steps:

  • Take a large mixing bowl and add the flour and ½ tsp fine salt. Whisk together to incorporate the salt. Add the water and whisk until the batter is completely smooth and the flour is fully combined.
  • Take the oil and pour into a large, sturdy saucepan with high sides. Heat over a high heat until it reaches 200C. To fry your ingredients, dip them in the batter, allowing any excess to run off, and carefully place into the hot oil. Fry until the batter is a rich, golden brown and crisp. The fried ingredients will likely float on top of the oil when cooked, too. Remove from the oil using a slotted spoon and blot on kitchen towel before serving. Sprinkle with a little flaky sea salt to keep crisp. The batter does not keep well and is best made just before using.

BATTER BREAD- EASY YEAST BREAD- GRANDMA'S

Grandma could stir up this no-knead white yeast bread quickly and bake it fresh for same day use. Of course it still takes a while because bread must rise, and that takes time. Prep time includes rising time. Nothing smells better in the kitchen than fresh bread baking.

Steps:

  • 1. Mix together 2 tablespoons melted butter, sugar, salt, yeast, and 1 1/4 cups flour. Add warm water and beat by hand about 300 strokes, or 3 minutes, with an electric mixer. Add remaining flour, scraping bowl often, and mix all together until smooth. Cover with a clean cloth and let rise until doubled in volume, approximately 1 hour..
  • 2. Stir dough down gently, and spoon into a lightly greased 9 by 5 inch loaf pan (the batter should be sticky). Pat down with floured hands to help shape. Cover again, and let rise.
  • 3. Preheat oven to 375 degrees while dough is rising the second time. When dough has doubled (about 30 minutes) bake for about 45 minutes. Place on a cooling rack, and brush top with 1 tablespoon melted butter.

YEAST PANCAKES

This recipe is from Taste of Home/Dorothy Smith. The pancakes are golden and thicker than a traditional pancake, and they are really good. Keep in mind, the cooking time doesn't include the time for the yeast to rise.

RYE BATTER BREAD

My brother lives in a part of the country that does not recognize rye bread - not at all! So I've been searching for an easy rye bread recipe, and ran across this one, from the Fleischman Yeast company. Batter breads are an easy introduction to yeast breads for beginning bakers. Any kind of rye flour can be used - light, medium, pumpernickel . Sunflower seeds or other seeds can be substituted for the caraway. Batter breads tend to be softer than more traditional recipe breads so that your slices will be a bit thicker. The recipe originally called for 2 tsp salt, which I've reduced to 1 1/2 tsp.

Steps:

  • Place 1/4 cup of the warm water in a large bowl and sprinkle the yeast over it, stirring to dissolve.
  • Add the remaining water, honey, and butter.
  • Slowly stir in the rye flour and 3/4 cup of the all-purpose flour, blending well.
  • Stir in the remaining flour, salt and the caraway seeds, to make a stiff batter. Cover and let rest 20 minutes.
  • Stir down the batter and pour into a greased 9 x 5 loaf pan. Cover and let stand in a warm, draft-free place until doubled, about 1 hour.
  • Bake in a 350 deg oven for 30 to 40 minutes or until done. Turn out and cool on a wire rack.
  • Note: The batter should be stiff - like a kuchen or other cake batter. It should not be so stiff that you could imagine kneading it, nor as thin as pancake batter.

1 1/4 cups warm water, 100-110 deg. F
2 1/2 teaspoons active dry yeast
2 tablespoons honey
2 tablespoons butter or 2 tablespoons margarine, softened
1 1/2 teaspoons salt
2 cups all-purpose flour
1 cup rye flour
1 tablespoon caraway seed

EASY BATTER BREAD

Posted in reply to a message board request. This is the recipe I used (over 40 years ago) when I made my first loaf of yeast bread. Its very simple to make, and produces a good, basic white bread for sandwiches and/or toast. If memory serves, the recipe was from the side of the Hecker's Unbleached Flour sack. Prep Time does not include the 1 to 2 hour rising time.

Steps:

  • In a large bowl, dissolve yeast in warm water.
  • Stir sugar into yeast/water mixture, let mixture sit until tiny bubbles start to form.
  • Add butter, salt and half the flour.
  • With electric mixer on medium speed, beat batter for 2 minutes.
  • Add remaining flour, stirring by hand (or on low speed) until well blended and smooth (batter will be very thick, like a very soft dough).
  • Cover bowl with a tea towel, and let the batter rise in a warm draft free place for 30-60 minutes or until doubled.
  • Beat the batter by hand, about 25 strokes (the dough will deflate).
  • Spread batter evenly into a greased 8x3 or 9x4 inch loaf pan.
  • Smooth out the top of the loaf by patting it with your floured hand.
  • Cover pan, and let batter rise again (about 30-60 minutes) until dough has reached the top of the pan.
  • Bake in a preheated 375°F oven for 45-50 minutes, or until the loaf sounds hollow when the top is lightly tapped.
  • Remove from pan.
  • For a softer crust, brush the top of the hot loaf with butter.
  • Cool on a wire rack.
  • Bread slices best when it is cooled.

1 (1/4 ounce) package active dry yeast
1 1/4 cups warm water (110°-115°F)
3 cups all-purpose unbleached white flour (or unbleached white "bread flour")
2 tablespoons soft unsalted butter
2 teaspoons salt
2 tablespoons sugar
unsalted butter, for brushing the top crust (optional)
